Awaiting the ferry to Mull.
Last night’s supper was Emerald Dahl with Golden Tofu (would be delicious with chicken or fish). Easy to make from Sainsbury’s December magazine.
Delia’s spiced red cabbage is a winter favourite of mine. I add some festive cranberries and swap the vinegar for apple cider vinegar and reduce the brown sugar in Delia’s recipe. It’ll be in the slow cooker all day and then I’ll split into batches to freeze.
Never knowingly undercatered when you weekend with your nutritionist buddies…
Kitchen time on a chilly BHOL Monday .... Cauliflower, Coconut, Broccoli and Turmeric Soup. Saute 2 chopped onions in coconut oil with 1 tablespoon of turmeric, add cauliflower florets (1 sm cauli) and broccoli florets (1 head), fill medium pan with water and 2 kallo vegetable stock cubes, leave simmering for 30 mins - then blend, add a can of coconut milk and 1 can/sachet of chickpeas. Delicious, smooth and creamy and good for you too!
Cauliflower and Broccoli are very supportive of female hormone balance - because they contain glucosinolates which are converted to indole-3-carbinol, which has a potent hormone regulatory effect.
The liver plays a key role in the production and clearing of hormones from the body - Indole-3-carbinol supports the liver detoxification processes through stimulating enzymes required to remove hormones (and other toxins) from the body.
If you've worked with me 1:1 you may have noticed a question we ask on my health questionnaire about how often you barbecue food that's because there can be a downside to FLAME grilling meat when it comes to our health.
FLAME Grilling meat can produce two types of carcinogens: heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). HCAs form when any muscle meat is cooked at high temperatures. PAHs, on the other hand, form when fat drips from the meat onto the flame. The chemicals then rise in the smoke and flames and cling to the meat.
But this doesn’t mean barbecues are out of the question. There are some things you can do to minimise the formation of carcinogens and enjoy a healthier feast.
I trained at ION so I'm are happy to share this article with you so you can still enjoy your barbecue in a healthy a way as possible.
Five tips for healthy grilling and barbecuing Grilling meat can produce carcinogens. We look at ways to enjoy a healthy BBQ during the summer months
