And now to break my fast with all the ingredients you see here...smidge of the tamari & ginger dressing, 1/4 of that ginger, & 1/2 the noodles 😉 everything else is whole.
And now to break my fast with this awesome salad... 🥑🍅kale, spinach,🌶, juice of a lime, cilantro, & black beans...added hot sauce & vegan each for dressing. 😋
Impromptu cookout today. Gonna make a cold plant based pasta salad...w/1/3 a box of simple organic truth rotini, can of spicy black beans, & 1/3 cup cilantro lime marinade & all the veggies & herb (😉) you see here (washed & cut), mix everything together & chill for 2 hours in fridge. Serve with fresh cut lime wedges.
Dinner is prepped for the next two days! 🎉 Shawarma portabella w/figs & quinoa salad is dinner #1 & Spicy black beans, corn, quinoa salad is dinner #2. I would not advice prepping meals for more than 3 days in advance, fresh veggies don’t last much longer than 3 days & who want to spend more than a 1/2 hour in the kitchen prepping meals, am I right?

Here we go!! Here’s the first week of summer break snacks! After legit eating tons of 💩 the last week of school I’m getting the kiddos back on track! 💪 What’s your go-to summer snack?
It is totally possible to find healthier alternatives everywhere! We stopped off at a Turnpike rest area for dinner...only fast-food restaurants there were Popeyes & a Sbarro Pizza. Large salad from the pizza place, drink from “gas station” area, & hummus from a kiosks in the center. It took a couple more minutes to locate everything but it is definitely possible to eat healthy on the road.
Well, y’all know how I feel about wasting...thus, here’s some random veggies etc. that are leftover in the fridge/freezer that need to go! So, I purchased awhile back & haven’t had the chance to give it a try, thus, stir fry it is for dinner tonight! 😉
I added a bit of kale...so lunch was kale, butternut squash, portobello mushrooms, black beans, & quinoa 💚😋

Mother’s Day gathering at our house & everything is plant-based!! ❤️ Happy Mother’s Day, mommas! 😘
Ingredients:
3 medium eggplants, sliced lengthwise in 1/4 inch slices
1/4 of a large onion diced
A couple cloves of garlic diced
1 portobello mushroom cut into bite sized pieces
1 container of Treeline herb & garlic nut cheese
Basil, (5 leaves or 1/2 a tablespoon) preferably fresh but dried is fine too
1 jar of your favorite (no sugar added) pasta sauce
Directions:
1-preheat oven to 350
2-place parchment paper on 2 cookie sheets, lay slices of eggplant on cookie sheets & sprinkle with a little salt, place in oven for 20 minutes or until slices are soft
3-meanwhile, place onions, mushroom, garlic, & basil in a pan and cook until tender (like 6 minutes or so)
4-remove mushroom & onion mix from stove and place in a bowl, add 1/4 jar of sauce & entire container of cheese, mix until blended
5-remove eggplant from oven & spoon a Tablespoons worth of cheese mixture at the end of each slice of eggplant & then roll each up and place in a 13x9 Pyrex dish, pour remaking sauce over eggplant and then bake at 400 degrees for 1/2 hour
6-enjoy!
Dinner is served! Eggplant roll ups & salad! Anyone interested in directions? Contemplating a website?
