Ultra-Processed vs. Unprocessed Diet

Unfortunately, ultra-processed foods (soft drinks, packaged snacks, meat nuggets, frozen meals, and foods high in additives) account for nearly 60% of the food we eat in the U.S.

But, how do ultra-processed foods affect us?

In a recent study, researchers at the National Institutes of Health (NIH) determined people ate more calories when consuming ultra-processed foods than when consuming unprocessed foods.

Each diet in their study had the same daily calories, sugar, fat, fiber, and macronutrients. There were equal numbers of male and female participants. And every participant ate each diet for equivalent time periods.

While on the ultra-processed diet, participants gained weight.

While on the unprocessed diet, participants lost weight.

But, what was even more interesting to me...
The cost of the unprocessed food was over 40% more than the cost of the ultra-processed food. To me, this means the food industry has created many cheaper food "alternatives." Clearly, this can’t be healthy for our bodies no matter how much research is performed to determine the specific effects.

To balance, re-balance, heal, and thrive, our bodies also need micronutrients (found in whole foods).

Let’s all place health ahead of convenience...even if we need to rearrange our schedules and our budgets to have the kinds of foods our bodies need.

Here’s Dr Mark Hyman’s food challenge…

Create a simple food diary. Eat as you normally do, but write down everything you eat or drink for 3 days. At the end of the 3 days, come back and look over your list and consider the following questions:

1. How many of the foods on your list are processed?
This means pretty much everything you ate that came in a box, a package, a can — or has a list of ingredients (including food additives).

2. How many cruciferous vegetables are you eating?
This would include broccoli, cauliflower, cabbage, brussels sprouts, and the like. While these vegetables are generally recommended for everyone, they are especially important to people who have a genetic mutation that makes it hard to create and utilize the detoxifying molecule called glutathione.

3. Did you remember to write down any supplements you are taking?
Depending on your personalized genetic mutations, a functional doctor may recommend certain B vitamins, vitamin D, krill oil, liposomal glutathione, or other nutrients you’ll hear about in this episode.

4. How many simple carbohydrates did you eat?
In the comments, you’ll see how to tell if you are carbohydrate intolerant — and have an above average need to cut back on simple carbs such as sugar in its various forms, breakfast cereals, baked goods, candy, and sodas. Can We Undo Chronic Disease?
…Yes!

I just finished reading “Undo It!” by Dr Dean Ornish and his wife. They have a simple lifestyle program which has been stopping…and even reversing…chronic diseases, like heart disease, type-2 diabetes, prostate cancer, high blood pressure, depression, obesity, high cholesterol, and more.

It increases telomere length, too!

If you want specific steps to follow, they’re here. And they cover the following areas:
● Whole foods plant-based diet
● Moderate exercise
● Stress management
● Love, social support, and intimacy

If you want to learn more about the science, it’s explained simply. (Or you can skip that chapter.) I was impressed with the explanations and I appreciate knowing why specific steps are prescribed.

Researchers at Tufts University followed adults between the ages of 35-80 who were enrolled in Medicare and/or Medicaid. They established two different scenarios where Medicare/Medicaid subsidized food costs.

In the first scenario...
by subsidizing only fruits and vegetables...they prevented:

● 1.93 million cardiovascular events
● 350,000 deaths
…And saved $40 billion

In the second scenario...
by subsidizing fruits, vegetables, seafood, whole grains, plant oils, and other healthy foods...they prevented:

● 3.28 million cardiovascular events
● 620,000 deaths
● 120,000 cases of diabetes
…And saved $100 billion

These are profound results.

Why Do We Eat?

Processed vs Ultra-Processed vs Unprocessed Foods

ULTRA-PROCESSED foods are those which have undergone significant processing and often include a long list of ingredients, many of which you would expect to find in a science lab rather than a kitchen. And it includes things like frozen meals and convenience foods, sodas, store-bought cakes and cookies, boxed dessert mixes, chips, pretzels, crackers, and more.

PROCESSED foods can include pre-packaged ingredients such as pasta sauce, salad dressings, and bread. These foods may be okay in moderation, but it’s still best to make your own at home whenever possible, so you can control what you’re putting on your plate.

UNPROCESSED foods are unaltered ingredients which are found in their natural state, things like fresh fruit, wild-caught fish, veggies, nuts, and seeds

Many processed foods are high in calories, sugar, sodium, fat, food additives, preservatives, synthetic dyes, and more….and cause nutrition deficiencies which can lead to all kinds of health issues.

Here are Dr Axe’s processed foods to avoid:
1. Processed meats (bacon, salami, cold cuts, etc.)

Canada’s Food Guide 2019

Canada just released a NEW Food Guide which suggests:
● Eating lots of vegetables and fruits
● Choosing whole grains
● Eating plant-based protein foods, like legumes, beans, and tofu more often than animal sources, like dairy, eggs, meat and fish
● Choosing water as your beverage
● Avoiding processed foods and beverages that are high in sodium, sugar, and saturated fat
● Cooking more often and eating meals with others
● Taking time to eat, and noticing when you’re hungry and when you’re full

I think this is real progress..and we will all benefit!
