KALE YEAH! Kale packs quite the nutrient punch, either sautéed or in salads. Pro tip: massage the kale for salads so it's easier to chew and digest. The nutrients support immunity and contains four times the vitamin C content and twice the selenium content of spinach, as well as nutrients like vitamin E and beta-carotene. Supports bone health.

I made Broccoli Rabe with Chickpeas and Kite Hill Dairy Free Ricotta. Roasted in the oven in EVOO. Quite delicious!

I learned the term "brown food" from my pal Andy and that it is delicious! I grilled Portobello Mushrooms with Roasted Potatoes and Carrots with some Forager Dairy Free Sour Cream. VERY filling.
I'm having a lot of fun with my Vegetarian week. My friend Lisa and I went to Real Food Daily, a Vegan restaurant in Pasadena, CA.
Everything was SO good.

Experimenting more with my plant based week. I made Tacos out of Organic Tofu.
4 oz organic tofu seasoned with
1/8 tsp of Cumin
1 tsp Smoked Paprika
1 tsp Chipotle Powder
Cooked in EVOO
Siete Tortillas warmed
Avocado
Romaine and
Miyokos Vegan Herbed Cheese
The tofu tastes like Taco Meat and the Vegan Cheese provides creaminess inside the crunch of the tortillas.
So freaking good!!
I adapted a recipe for breakfast sausages into a vegetarian option!
White Bean Breakfast Patties:
Organic Great Northern Beans
Fresh Sage
Shallot
Shredded Carrot
Almond Flour
Fried in Avocado Oil for 3 minutes on each side
SO good.
We have always been the BIGGEST meat eaters. I'm bored with it at the moment, so today I'm starting a weeklong Vegetarian trial and, depending on how I feel, I will be doing the Plant Based Whole30 in May.

I made a quick dinner from inspiration by with AIR FRYER SALMON. I also made homemade sweet potato chips and a BBQ Ranch dip with ranch and Backyard BBQ sauce. Simple, clean and delicious.

Sick and tired? Follow me for what’s to come. We can go on the next part of this healing adventure together. This week marks the 10 year anniversary of my Lyme diagnosis.
The first 6 weeks after my diagnosis were very scary. My vision was changing, joints felt like sandpaper, my arms felt like they were on fire and my energy was completely zapped. I changed my food habits to reduce inflammation and after the first few weeks of eating clean, all of that started to dissipate.
I’m so lucky to have found clean eating and, more specifically, Whole30 through my friend Sarah Jo. (Shout out Sarah Jo!) I don’t want to know what my quality of life would be without the changes in nutrition and lifestyle. I became a Whole30 diehard.
So many positives have come since the diagnosis. I learned what true self care is. I healed my relationship with food. I’ve kept my weight under control. I value what I put into my body. I know when to put myself first.

This is a Whole30 Shakshuka with only the best ingredients. Shakshuka is a staple of Tunisian, Libyan, Algerian, and Moroccan cuisines traditionally served up in a cast iron pan with bread to mop up the sauce. Since we keep it clean, bread is not necessary. Always fun to make and quite delicious.
