Made carnitas for dinner last night, I think it was a win, fam gobbled them up. Faked a slow cook with the instant pot and crisped them up in a pan after. Topped with avo, salsa, cheddar and lettuce - simple and delicious. Plus a side of Mexican rice and zucchini. Anyone else obsessed with homemade carnitas?

Last week was long and busy, so I'm celebrating the start of a new week by making these paleo sandwich rolls. They got 👍👍 from the family. 🎉

It's got a new technique for me - pouring a very liquid-y batter into oiled metal mason jar lids to make perfect round rolls. Very cool!

These are descriptions of what these doctors' own personal experiences have been with post-viral COVID (the kind that goes on for months following an initial infection). They sum up the experience of so many individuals with post-viral illnesses or chronic illnesses.

Finally some research is being put into this long-neglected area of medicine. I am hopeful that out of this crisis of covid, we may advance our understanding of these disabling conditions.

I am thankful to these doctors for applying their own personal experiences to the study of chronic (or post) viral illness. Too many people have been unseen and unheard by their doctors and have been left to suffer and figure it out on their own. Too many people have had doctors "brushing off their symptoms as psychiatric in origin."

What we know so far with COVID is that common triggers for a worsening of symptoms or relapse are "exercise, stress, caffeine, alcohol or heat." This may apply to other chronic and post-viral illnesses as well.

Until then, the best information we have to feel better and increase the odds of recovery are: don't push yourself physically or mentally, rest when needed, and eat foods that are healthy for you (low sugar, lots of colorful veggies, quality proteins and fats).

Woohoo! Great news, as one more country gets rid of this chemical!

NEWS: Mexico’s Environmental Ministry announced it will completely phase out glyphosate-based herbicides over the next four years with an effective ban by 2024.

The move is largely attributed to Mexican Environmental Secretary, Victor Toledo, who has publicly stated that glyphosate is “the most dangerous poison in the world.”

This is not Mexico’s first time putting personal and planetary health first. They stopped importing roundup (with active ingredient glyphosate) back in November of 2019 saying, “Glyphosate represents a high environmental risk, given the credible presumption that its use can cause serious environmental damage and irreversible health damage.”

Mexican officials shared in the announcement last week that they’re planning a collaborative approach to educating the public on the dangers of glyphosate with investments in education programming, awareness campaigns, and researching alternative w**d management practices based on indigenous farming techniques.

We are incredibly grateful to our neighboring country for having the courage to speak the truth and take a stand against the root cause of so many diseases. We are hopeful this announcement will galvanize more leaders into taking logical action for our health and safety.
