We used these Trader Joe’s products to make this delicious plant-based BBQ paella last evening. The recipe is from Steven Raichlen’s new cookbook, “How to Grill Vegetables”. I added smoked paprika, a bay leaf, a dash of cayenne papper and kalamata olives to the original recipe. I used mini bell peppers instead of the bell pepper that the recipe called for. And frozen artichoke hearts in place of fresh artichokes. And I used less olive oil. I used brown rice and parboiled it before adding it to the paealla. To parboil the rice, bring a large pot of water to boil; add 2 cups of short-grain brown rice and continue to boil, uncovered, for 15 minutes.

I made a Curry Lentil - Roasted Cauliflower Salad last week and it was really good. When I shopped at Trader Joe's today, I saw the package of Roasted Cauliflower and realized that I could have made the salad in less time had I used these shortcuts. Next time....
I added some chopped walnuts and raisins to this recipe:

We often steam a few day's worth of vegetables to have on hand to add as a side dish or to snack on. I love to add a tablespoon of Trader Joe's Asian Style Spicy Peanut Vinaigrette or a tablespoon of Trader Joe's Tahini to a bowl full of steamed vegetables and have them as a snack. Yum!

Want a simple, healthy and delicious soup to put together for lunch or dinner?
Combine 2 cups of Trader Joe’s Latin Style Black Bean Soup, 1/4 cup Trader Joe’s Spicy Smoky Peach Salsa and 1 cup of pumpkin purée (canned is fine and much easier. Trader Joe’s canned pumpkin is available seasonally). Add cumin or cayenne for added flavor. Add chopped cilantro for flavor and garnish. Yum!
