Overnight oats is a quick and easy way to prep breakfast. Often I make them in handy 250ml mason jars, making them easy to transport and the perfect serving size.
My usual recipe is fairly plain with oats, plant milk and a little flavouring topped with some berries or fruit.
Tonight I decided to try a slightly different spin on my usual. This recipe has grated apple and chia seeds and I made a big batch. Tomorrow morning I'll just scoop out my serving into a bowl and top with some berries, plant milk and what ever tickles my taste buds.
If you've ever considered trying plant-based eating this article includes some interesting discussion. I'd agree with her sentiments about overall health and well-being.
This has been my focus for the past 5 months and I'm enjoying the challenge of finding delicious recipes to cook. I'm using more spices than I ever did before. I've tried things like coconut rice to vegan shepherd's pie. There are very few things in my old eating habits that I miss.

The World Health Organization recommends for fruit and vegetable intake is at least 400 grams per day, or five servings of 80 grams.
One 80-gram serving is equivalent to a small piece about the size of a tennis ball. For fruits and vegetables that can be measured by the cup, a serving is roughly 1 cup.

This makes me happy. The kids are so good and are so present in the singing of the song. And the reaction of Andy once they're finished is very special.
Music has always been a part of my life. From playing the piano, singing in the church choir, dancing with my parents and grandparents as a kid, learning to dance as an adult, teaching dance and just filling the house with tunes as I go about my day.
Do you have a song/album that brings you back to a specific moment in your life? I do.
That's sort of what music is all about for me...Moments!
It's the only way.
And it tastes good too!!

Our Story
In 2017 I embarked on what I have labelled “My Healthy Living Adventure”. After several years of living a lifestyle of indulgence and lack of desire to stay on a healthy path, I realized that I was putting my health at risk. I was concerned that I was making myself susceptible to a chronic illness. Something I did not wish to experience. I’d watched a loved one struggle with his health for many years and living in pain, taking daily medications and always seeking the next thing that might be a ‘cure’ was not what I wanted for my future.
In May 2017 I make a lifestyle change. A change that includes more plants, higher quality nutrition and a focus on fuelling my body for health. I didn’t realize the impact that these changes would have and now it’s become a lifestyle.
Am I 100% perfect? Heck no. But I do strive for an 80/20 balance in diet and lifestyle. I enjoy wine, cocktails and treats just like everyone else, but I understand that for my health, that can not be a daily occurrence. I enjoy being active but I also enjoy sitting on the couch binge watching my favourite shows.
My goal with this page is to share my journey and hopefully inspire others to move towards a healthier lifestyle, one baby step at a time. Maybe it’s a recipe, maybe it’s a mantra, maybe it’s a workout. What ever it is, congratulations on taking that step! And welcome to the ‘journey’!
