Gratin Dauphinois
Potato gratin with fresh cream, herbs and cheese. This is a classic French recipe. My 1st one, and it was perfectly delicious.
1. Mix double cream with 1/3 milk (or use single cream), garlic paste or chopped, herbs, salt n pepper together.
2. Add cream mixture to a layer of semi-cooked potato slices.*
3. Layer with grated cheese. Repeat with 2 more layers.
4. Cover with foil. Cook in the oven for 20 mins, 220C.
5. Cheese topping on the top layer is added last. Remove foil. Cook uncovered, for another 15-20 mins till the cheese is golden brown.
Eat on its own or as a side dish to Sunday dinners.
*Tip: To cook fast and to stop cream from curdling, use semi-cooked slices of potato. which should be soft but firm and not falling to pieces. 2 big potatoes would make a dish enough for 4.

Autumn - Easy Crumble.
Colds season. Colds remedies. Hot soups - and apple crumble. You get colds when you are cold, so warm up. And treat yourself to seasonal fruits.

Core, peel and stew some apple (cook slowly over low heat with some water). Add sugar or sweetener. Crumble some biscuits on top. Mix a lump of butter or margarine (olive oil is healthiest) with the biscuit crumble to keep it moist. Bake in the oven for 20-30 mins depending on size of dish. 180C. Easy. Yummy.🙂

French Classic Cordon Bleu
(Easy cheese-melt-in-the-middle chicken bake).
1. Chicken breast. Use rolling pin to flatten meat out. Roll the meat round ham and cheese. Season. Chill rolls in fridge to firm up.
2. Coat rolls with flour, dip in egg and cover with breadcrumbs.
3. Bake in oven at 35-40 mins 190C. Serve hot. Bon appetit.,
Use golden Paxo breadcrumbs for a golden topping. I used fresh brown breadcrumbs. Tasted yummy all the same. Keep dog away. Derby loves ham and cheese and ate half of mine! 🥰

Spaghetti Meatballs. One of our fav. dishes. Top with grated cheese or parmesan for authentic Italian flavour (optional). 🙂

Spaghetti Meatballs. One of our fav. dishes. I post easy-cook instructions specially for busy working Mums on a tight budget. Buy the ingredients! Spaghetti, pasta sauce and cooked meatballs. And onion.

Chop up finely one big onion. Fry till soft. Add sauce and meatballs. Heat up. Pour over cooked spaghetti. Easy! Serve hot. Optional: top with grated cheese or parmesan for authentic Italian flavour (optional). Serve with veg. Boun appetito!

TIP: For connoisseurs, add a dash of red wine. I also add chopped tomatoes, onions, dried herbs and garlic. Salt, sugar, and spice, season to taste. 😽

Easy Yorkies.
Whisk up an egg. Add milk and flour, a bit at a time, to make a smooth batter till the mixture looks like a thick cream. Whisk it in a jug for easy pouring. Season with salt and pepper. Fill the trays with a thin layer of oil and heat up in the oven to 220C till the oil is sizzling. Pour the mixture into the trays fast before they cool down. Cook at 180C for 15 mins (depends on the oven) till risen and golden.
Tip: Use self-raing flour for easy rise. Homemade is best for that freshly baked taste. Crisp on the outside. Fluffy inside. Yummy! 😽🥰

Presentation brings customers in, but tastes keep them coming back! Yummiest fish pie is one with fish 'swimming' in 'tons' of cheesy broccoli cream sauce. I am for the sloppy one. :-)

(PS: You can make small individal pies instead. Easy presentation) :-)

Love this recipe. Quick cook.
You can get Laksa or Tom Yum Shrimp Curry from Amazon (yes, they have inexpensive tubs delivered to your home) :-) Add coconut milk or cream to milk, lemon grass or lemon zest, coriander, spring onion to a large pan. Boil up. Smells amazingly fresh, lemony and spicy but tastes sweet and coconuty. Quick cook for 5 mins. Serve with rice or noodles. Easy. Eat.
