Dinner tonight was amazing, even if I do say so myself! Pan-fried venison steak, rich egg mash, braised savoy cabbage with lardons, and an onion, pepper, carrot and pea ratatouille. Served with a blackberry and red wine reduction.
The dish was a symphony of flavours. It must have been good...my wife loved it!

Gluten-free dinner tonight was pan-fried pork shoulder steaks with brown rice cooked in stock and a delicious mixed leaf salad with pine nuts, crushed macadamia, peaches and sultanas and dressed in extra virgin olive oil. This is one dish that is staying on my menu plans!

It's been feeling more like Spring here in Berkshire than the winter that mid-February should be. So, it seemed time to uncover my smoker and cook up some tasty pork belly burnt ends. They came out beautifully tender and, when coated in my slightly spicy barbecue sauce, we're amazing. At least, that's what my wife reported!

I'll show some pics of the process and end result below, and I'll post the recipe in my blog later this week.

What's your favourite BBQ or smoke-infused food? Being in need of gluten-free products, do you create your own spice blends and sauces, as I do? I'd love to know.
