Half Marathon #2 was a success 💯

The week prior to this race I was going against a knee injury that made me second guess myself, but I am so happy that I pushed through and fought til the end! The last 0.25 mile of the race my body decided to reject everything and I started throwing up but somehow managed to keep running through it and cross that finish line with a 13 minute PR🏃🏽‍♀️🎉

It was quite a memorable ending if you ask me 😂

This is something i've been wanting to do for a long time and it makes me so happy to finally share more of what I know. Nutrition goes far beyond the degree I went to school for. This is something I am extremely passionate about and utilize in my everyday life. I want to inspire others to find the joy in cooking, exercise in different ways, dive into the world of nutrition, and learn more about me!

One of my favorite meals🫶🏼

Lomo saltado is a type of Peruvian stir fry consisting of sirloin strips, tomatoes, red onion, and french fries. It is served over rice and topped with a delicious spicy green sauce.

I DID IT!!🏃🏽‍♀️🎉

First half marathon in the books and it’s only the beginning.

I am so thankful for this experience and what my body can do for me. For the past six months, I dedicated myself to be becoming a better runner and I am beyond proud of the progress I have made. Early mornings, countless runs, strength training, prioritizing nutrition and so much more went into this.

Thank you to everyone who supported me during this time and a special thank you to for running this race with me 🤍 I couldn’t have done it without you!

Let’s see what’s next 👀

Last night’s date night 🌹

Where else would I be other than , I even ran into some friends because they know it’s my go-to restaurant 🤣

Started with a ceviche sampler and then got the chimichurri carne asada with roasted potatoes. Oh and can’t forget their delicious drinks 🍹I got a mojito on the rocks!

My most recent breakfast fixation 🍳🍞

Egg white omelet with turkey and onions topped with arugula and an over easy egg, fruit (whatever I have), sourdough toast or English muffin. And can’t forget the coffee☕️

Making sure I get protein, carbs, healthy fats and fruits/vegetables in every meal is what makes me feel and perform my best.

It’s so important to pay attention to how different foods make you feel so that you’re able to go through each day feeling energized and ready to take on any tasks that come your way.

A perfect date night 💋

One of my favorite things in life is hosting, but more importantly sharing the food I create with the people I love most. I might have prepared for this all day just to enjoy a few hours in the evening, but to me, that is what makes me the happiest.

From the small details of printing out a menu to actually preparing the food, it’s what I love to do!

As some of you might know, I decided I wanted to train for a half marathon🏃🏽‍♀️

I’m giving myself a few months to prepare because running has never been a strength of mine😅 but I’m determined to change that!

With that being said, properly fueling my body is the main priority right now. I’ve always had a relatively healthy diet, but with this shift in exercise I am becoming a lot more in tune with my body and what it needs to maximize performance. I’m focusing more on my sleep, hydration, and making sure I am eating nutrient dense foods before, during and after my workouts.

Banana Nut Oatmeal Bake🫐🍓🍌

Hearty, sweet, and full of nutrients. This oatmeal bake is perfect to prep for your week of breakfasts or even just a quick snack throughout the day! Pairs perfectly with Greek yogurt and berries.

-2 ripe bananas, mashed
-2 eggs
-1/4 cup maple syrup
-pinch of salt
-2 tsp baking powder
-2 cups rolled oats
-dash of cinnamon
-2 Tbsp coconut oil, melted
-1/4 cup pecans, chopped

Preheat oven to 350 degrees F. Mix together banana, egg, maple syrup, and coconut oil until well combined. Add in oats, salt, cinnamon and baking powder. Mix all together and pour into a greased 9x9 baking dish and sprinkle the pecans on top. Bake for 35-40 minutes or until golden brown. Cut into squares and enjoy☺️

Tonight’s dinner 🍷

I had a lot of leftover basil so I made a homemade walnut pesto which was to die for!! Added some pan fried shrimp to my pasta and topped with sautéed cherry tomatoes and fresh garlic.

This is definitely a family favorite 😍

First post of the New Year! 😅

I can confidently say that I thoroughly enjoyed the holiday season and all the memories I was able to make! I’m so thankful for everyone who follows and supports this page because it’s something that I love doing ❤️

There’s a lot of exciting things I have in mind for this new year so stay tuned 👀 but for now I wanna know what your goals are for 2023!

Here’s a few of mine:
-Make more new recipes
-Travel
-Keep exercising 3-5x/week
-Spend more time with friends and family
-Build my business/put my visions to life

These bagels were a little too easy to make👀

Thanks to recipe, these came out so delicious!!

I made 4 different flavors: sesame seeds, parmesan, salt, and cinnamon sugar.

These will definitely become a weekend staple in my house 🏠

The quickest and most delicious lunch!! All from

I used 1 can of albacore tuna mixed with mayo, sesame oil, and sriracha, 1/2 cup jasmine rice, 1 small cucumber and 1/2 an avocado

I put each ingredient stacked in a ramekin and flipped it over to get this cute dish. I topped it with sesame seeds, more sriracha and island soyaki sauce.

It’s full of protein, cost effective and takes less than 10 min to make!

If you know me, you know I love ‼️ I will forever rave about their food and drinks (they also have specials everyday that I can tell you from the top of my head😂)

This is just to show you guys that it’s okay to eat out and treat yourself to all the delicious foods that make you happy. Don’t get me wrong I love cooking at home, but there’s just something about going out for food and drinks that is so special to me especially when you’re sharing it with loved ones.
