Do you feel discouraged when trials come your way?

Of course you do! I think everyone does.

A little tip to help lighten your mood when things like this happen is to think of things you have to be thankful for… even in the unexpected situation you find yourself in.

For example, this past weekend I slipped and fell in our garage and really messed up both my neck and ribs in the process, but…

I'm super thankful that I didn't break my neck or fall onto something sharp that could have created an even worse injury for me! Plus, I’m grateful my husband was home at the time so he could help get me up off the floor and back inside the house.

The Holidays can make it difficult to be consistent with practicing healthy lifestyle habits.

I'd encourage you not to stress about it though, as it's just for a temporary time.

To ease your mind and enjoy the festivities, simply pick a date that you'll plan to return to your normal healthier routine. This will allow you to be at peace knowing your changed ways are only temporary for the Season.

I've always loved peppermint bark at Christmastime, but I don't like the unhealthy ingredients that are in it.

Fortunately I've found this amazing recipe to be an excellent substitute, PLUS it's actually good for you!

Healthy Collagen Peppermint Bark

❄️ ½ cup coconut butter
❄️ ¼ cup + 1 Tbs. grassfed collagen peptides (I use Vital Proteins brand)
❄️ 1 Tbs. honey or maple syrup
❄️ 1 Tbs. coconut oil
❄️ ½ tsp. vanilla extract
❄️ 2-3 drops Young Living Vitality Peppermint essential oil
❄️A handful of cacao nibs
❄️Pinch of salt

INSTRUCTIONS

1. The coconut butter should be soft enough to stir. Like coconut oil, the consistency of coconut butter varies with the room temperature. If it is solid, place the jar in a pan of hot water, allowing the water to come halfway up the sides of the jar. Sit for 5 minutes to soften, then stir until creamy.

2. Line a baking sheet with unbleached parchment paper

3. In a bowl, combine the coconut butter and collagen. Add the honey. When the honey is added, the mixture will become slightly crumbly.

4. Add the coconut oil, which will help pull the mixture together. Add the vanilla, peppermint essential oil and a pinch of salt.

5. Add the cacao nibs, and if needed some extra coconut oil to get the mixture to stick together.

6. Transfer the mixture to the baking sheet and form into a square with your hands. Score the square with a knife to create small bars. Chill in the fridge until firm, about 30 minutes. Then cut into bars along the scored marks.

7. Store in an airtight container in the fridge.

When you occasionally allow yourself to eat yummy Christmas treats, make sure you're actually enjoying them while you do.

Cuz if you're feeling guilty and stressed out all the while you're eating it over the fact that you're indulging in it in the first place…

It'll do more harm to your body than if you simply enjoyed the pleasure of eating it. So enjoy!

When not allowing ourselves to eat any of the Christmas goodies that everyone else around us is enjoying, it's easy to end up feeling deprived as a result.

And here's the thing…

When we feel deprived, it's far more likely that we'll overindulge and binge on some other kind of treat later on when we're alone. Which will likely be worse than had we just allowed ourselves to enjoy a small yummy goody in the moment with everyone else.
