Gluten Free Raw Vegan Lasagna ๐ฟ
Kitchen experiments today included raw lasagna sheets: 600g blended zucchini & 3 TBLS flax blended, spread thinly, and dehydrated. This makes 2 sheets which can then be cut into multiple squares or rectangles depending on your desired lasagna size โจ I recommend cutting the sheets before assembling. After making the sheets in the morning, they were ready by lunch.
Bottom layer: walnut โmeatโ consisting of walnuts, tomato, onion, & spices in the food processor, then topped with another lasagna sheet ๐ฑ
Next layer: Macadamia Garden Cilantro Arugula Pesto and chopped tomatoes, topped with another lasagna sheet.
Top layer: Cilantro Dill Cashew Cheez consisting of blended soaked cashews, water, lemon, salt, and pulsed in cilantro and dill with a drizzle of tomato red pepper sauce ๐
After preparing all layers, I placed back in the dehydrator to warm before enjoying!
*I made 2 large and 2 smaller lasagnas*
This lasagna is very fulfilling, but full of incredible flavor ๐ฟ๐ฟ๐ฟ

I have now successfully made delicious vegan versions of both Pancit & Lumpia to keep my Dadโs family Filipino traditions going ๐๐ฝ
Next time I will make a more authentic sauce, but this tangy sweet & sour red chili pepper dipping sauce was perfect ๐๐ฝ Our lumpia wrappers are made from blended coconut meat, coconut water, red pepper, dates, onion, dash of oil & red wine vinegar - then dehydrated ๐ฑ
These lumpias are filled with homegrown cabbage, carrots, onion, & โwalnut meatโ โ๏ธ Rolled and placed back in the dehydrator before enjoying with dipping sauce ๐

Spinach Wrappers - 3c young coconut meat, 3/4c fresh pressed organic spinach juice (spinach harvested from the garden), & 1/2 tsp sea salt blended then dehydrated. Cut into desired shapes - squares are good for making triangle rawviolis โจ
Filled with warmly blended cilantro macadamia cheeze & pepper, some with avocado, too ๐ I added the cheez, folded into triangles, & put in the dehydrator to warm just before serving โ๏ธ

Every morning, I drink fresh coconut water, high quality organic tea, cucumber juice, citrus juice, & sometimes garden green juice before enjoying a freshly blended coconut smoothie ๐ฅฅ My beverages are consistent โจ I drink one and move onto the next ๐
Drinking liquids of vitality are beneficial for your digestive system and overall health ๐๐ฝ For breakfast, try reaching for liquids instead of solid food. Your body will thank you, & your energy levels will be high ๐

Easy Peasy โMashed Potatoesโ : Approx 3 cups of organic cauliflower from the garden, 1 c organic sprouted macadamia, 1/2 c lime/lemon + your favorite seasonings such as thyme, rosemary, salt, & pepper ๐๐ฝ Blend away using the tamper, & you have mashed potatoes โจ Eat as is or warm in a dehydrator!
For the gravy, experiment with your favorite flavors, but I blended a mix of red onion, red wine vinegar, olive oil, fresh orange juice, blackstrap molasses, macadamia, dates, jalapeรฑo, & apple cider vinegar ๐ Coconut aminos are good, too if you have on hand ๐๐ฝ This can also be warmed in your Excalibur Food Dehydrators โจ
For last minute stuffing, I added our homegrown broccoli, cauliflower, macadamia, & spices to the food processor, then mix in organic chopped celery, carrot, and onion. Add in a dash of coconut vinegar, lime, or gravy for some liquid. Warmed in the dehydrator is delicious.
For our dinner, I layered warmed spinach and kale from our garden, stuffing, dehydrated sliced macadamia cheez, mashed potatoes, gravy, & kale chips ๐ Fresh rosemary and thyme are key here for the perfect holiday smells. We use local macadamia nuts, but you can also replace with cashew or your favorite nut/seed ๐ฟ
