Ingredients:
-2 cups of cherry tomatoes (any color)
-6 cups of baby arugula
-1 endive, sliced
-1 (12oz) jar of artichoke hearts, cut into wedges and drained of juice
-8 oz of mini mozerella balls
-1/2 cup fresh basil
-4 tbsps toasted pine nuts
-1 tsp chili flakes (optional)
-1/2 cup of pitted olives, cut in half
-1/2 fresh squeezed lemon
-4 tsp olive oil
-4 tsp balsamic vinegar
-sea salt
Instructions:
Arrange all the ingredients in a large bowl then drizzle with lemon juice, olive oil, and balsamic vinegar.
Sprinkle salad with sea salt, chili flakes, and black pepper, gently toss.
