Superfoods, what are they?

It’s a term used to claim the food confers to health benefits resulting from the exceptional nutrient density in the food.

I introduced goji berries into my diet earlier this year. I didn’t do it sooner because I didn’t know they existed!

I love using them for my smoothies, smoothie bowls & even oatmeal.

They honestly taste like candy. So if you’re craving candy, snack on these, not the sour patches.

This is a dried fruit & it’s easy to eat a lot in one sitting, making it easy to eat a lot of calories for just a simple snack.

Don’t let that scare you, eat them. They have AWESOME nutritional benefits. Just don’t eat a whole cups worth in one sitting.

It honestly hurts me to see kids eating skittles, nerds, sour patches & other candy that is SO harmful to their little developing bodies🥺

And see the problem is that people think “just one time won’t hurt”… but it does!!

Maybe not at the age of 5 but it will at the age of 50, or sooner if ya don’t take care of your health.

👉🏼 studies show artificial colors are linked to hyperactivity, ADHD, depression, hives, & asthma.

👉🏼 gelatin can cause bloating & heartburn.

The worst part is what it’s made out of: dead animal body parts (all of it)🤢

Carrots that make you go “MMMMM”

With Thanksgiving coming up, this is a dish you won’t want to miss having on the table.

It’s SO affordable ✅

Easy to make ✅

Easily shareable ✅

& tastes good even if its left out a few minutes before eating ✅




1. Rinse & semi-peel the carrots.

2. Place the carrots onto a baking sheet & drizzle some liquid aminos. Use your fingers to fully coat.

**To prevent sticking spray oil onto the pan first or use a silicone sheet**

3. Bake at 450° for about 20-30 minutes or until soft & you see the glazed look.

4. Plate it, drizzle tahini & Organic Tamari Chipotle BBQ Sauce.

5. Top off with sesame seeds, half a lemon juice & dried basil.

That’s it!

I’ve tried lots of store bought mint chocolate chip flavored ice creams & this homemade one TOTALLY fulfilled me, but in a different way (and better).

There’s something about getting creative in the kitchen… & then trying it… & loving it.

And knowing I’m still able to have my favorite flavors without harming my body, this planet or the animals ✊🏼🐄🌎

So THE SECRET TO MAKING THE BEST NICE CREAM:

✅ frozen bananas
✅ no liquid added
✅ a quality high-speed blender

Check off those 3 & the rest is up to you! Get creative with the ingredients to bring out different flavors & toppings to bring out different textures 🤩

👉🏼 Bananas = natural sweetness (you can add dates too for even more sweetness)

👉🏼 No liquid = thicker, “ice cream like” texture

👉🏼 Quality high-speed blender = makes it easy to blend with no liquid added to create the thick, creamy texture

HAVE YOU EVER HAD PAELLA?

I LOVED this dish as a kid. There’s was always so much flavor & it was so creamy. I was also really into seafood - so it was a hit.

Now since I’m plant-based I don’t eat it anymore, BUT

Just because we grow into different lifestyles & cultures, doesn’t mean we have to give up flavors we used to love!

So I made a vegan paella :-)

Save this one for later 📲 (trust me)

Ingredients:

2 cups Basmati Rice, cooked
1 Red Bell Pepper
½ Yellow Onion
3 Garlic Cloves
3 Bay Leaves
1 Medium Vine Tomato
1 ½ Cup of Frozen Peas
4 Hearts of Palm Stalks (1 Can)
6-8 Marinated Artichoke Hearts
1 ½ Cup of Veggie Broth
½ Lemon
2 Cups of Baby Cremini Mushrooms
1 tsp Paprika
4 Dashes of Black Pepper
4 tbsp of “Paella” seasoning or “21 Seasoning Salute” from Trader Joe’s

Procedure:
Cook the rice.

Rinse veggies to prepare for chopping.

Grab a giant, wide pan & add to medium/high heat with a splash of water. Prepare for non-stick as needed.

Chop half of the bell pepper into strips (for decorating) & the other half into cubes.

Chop the mushrooms into slices.
Chop the tomato into small cubes.
Chop the yellow onion in half, store one half in a sealed tight container. Cut the other half into small cubes.

Use a garlic clove mincer or chop into tiny pieces with a knife.

Add the tomato, onion, pepper cubes (save the strips for later) & garlic cloves to the in. Mix & cover to let cook for 5 minutes.

Add a splash of veggie broth into the mix & add the mushrooms. Cover & let cook for 4 minutes.

Add 2 tbsp of the “Paella” or “21 Seasoning Salute” seasoning, Mix. Do not cover, let cook for 3 minutes. Lower the heat to medium.

Drain the hearts of palm stalks if purchased in a can & chop into ‘scallop -like’ sizes. Add to the pan.

Add the marinated artichokes to the pan. Mix.

Cover & let cook for 3 minutes.
Add the cooked basmati rice into the pan. Mix & add the other 2 tbsp of the seasoning, the black pepper, paprika & lemon juice.

Add ½ cup of veggie broth. Mix & cover. Let cook for 3-5 minutes on medium heat.

Add the remaining 1 cup of veggie broth, mix. Let sit with no cover for 5 minutes.

That’s it :)

I woke up to 7K followers today & I just want to express my gratitude for all of you & this little community that WE have built.

I see all of you & I read all of your comments & messages. Sorry sometimes it takes some time to reply, my eyes also need to rest or else I’d get burnt out ya know. But thank you for being here. You help me live my dream life.

And I just want to say that no journey is linear.

And as they say, “if it was easy, everyone would do it.”

No one taught me how to cook, I learned by myself when I left for college.

I don’t “just have good genes” & I put in work to maintain a toned physique. (which I enjoy. Fitness shouldn’t be a chore.)

I haven’t always been healthy, I’ve invested my time, energy & money to research & to do what’s best for my body. (which is how I found my passion for veganism.)

And I’m not just “lucky” that I get to work from home, I worked hard & made a risky decision to put myself in this position. (best decision ever btw)

And then I invested in myself because I knew what I wanted to do, I just didn’t know how to actually make it work. (its okay to ask for help.)

So whatever you gotta do to make more time for yourself, clear the acne, lose the weight, build the muscle, heal the symptoms, heal the illnesses, be free & happy… just go do it.

I started from zero too.

But I chose to try & risk failing rather than choosing to fail.

When was the last time you put yourself first? It’s not selfish. It’s self care.

Just remember that at the end of the ups & downs there’s a smooooooth road waiting for you.

And that I’m just a DM away.

Have you ever had absolutely 0 desire to go to the gym but did it anyways because you want to look or feel a certain way?

Have you ever been told that the only way you’ll be content with your body is if you eat massive amounts of protein & lift heavy weights for hours?

…if you have.. hear me out.

In order to build strength, endurance, confidence or burn calories & excess body fat - you don’t HAVE to go to a gym & lift heavy weights if you don’t WANT TO.

Dancing, hiking, running, swimming, yoga & sports are all activities where you ARE burning calories, building strength, confidence, endurance, stamina, etc.

Not only are you working your body.. but you’re enjoying it because it’s what you love to do!

Personally, I ENJOY going to the gym & lifting weights. It makes me feel strong & accomplished AF.

But I also enjoy volleyball, walking, jogging, & other activities so I also do those. Doing those fulfill me just as if I went to the gym because I still moved my body, even if it was a different speed or strength level.

Plus, I love having variety in my life just like I do with my food 😉

So if you’re want to be “active” but don’t want it to feel forced or like a chore, think about what activities you love that involve movement, pencil it in your agenda or on your phone calendar & go do it!

With the holidays approaching… you’re probably already thinking about what dishes you want to bring to the table for your family & friends🍃

It’s easy to get food catered or go out & buy pre-made foods & snacks from the store, but why not get creative at home & choose the ingredients YOU want?

We’ll never know how much oil, salt, or sugar is added to those foods. We’ll never know exactly which ingredients they used & if they’re even organic or not!

And when the food is made at home… with love…it just tastes THAT much better. Who agrees?!

October 28th, 2020 was the last day I clocked in.

The last day I dreaded my drive to work to dread sitting at my desk even more.

The last day feeling like I was wasting SO much TIME & ENERGY on something that didn’t fulfill me.

The first day I said YES to myself & my dreams.

& even though it was hard to leave my work fam - it was time to put myself first.

For the past 2 days I’ve been at my first conference event ever.

So. Much. Value. SO. MUCH!!!

It has been two 12 hour days so far yet it hasn’t felt long at all.

Being in a room full of entrepreneurs & people wanting to make an impact & change the world HITS DIFFERENT!!!

These are MY people because they UNDERSTAND me. (Its like when vegans meet another vegan but times 100000 haha)

I didn’t plan on coming to this event. (Legit found out on Wednesday & drove out to Orlando at 4am the next morning to make it to day 2) I ignored it in my emails, but the universe led me here anyways.

I am in the right place at the right time. Exactly where I need to be. This is the push I needed to take action on the thoughts & ideas I’ve been procrastinating on for the past 2 months.

Procrastinating on my dreams.

If it wasn’t for me taking a leap & putting aside what we’re all taught to do (get a corporate job so we can build a 401K & enjoy the big bucks AFTER I retired AFTER I’m 50 & probably too weak to hike the pretty mountains????? No thank you.)

And not just believing but KNOWING that I am capable of doing whatever I set my mind to - I’d still be clocking in.

So the next time you tell yourself you can’t do something because of whatever reason… write that limiting belief down on a paper & throw it in the trash.

If you really, really want it, you’ll do whatever it takes to make it happen.

You want financial freedom? Start creating.

You want to feel like a million bucks? Clean up your diet.

You want to get strong & fit? Go put in the work.

You want to start a business? Go find guidance.

BELIEVE in yourself & INVEST in yourself.

Then take action & stay consistent. Answer your calling because we only have one life.

OK LETS BE CLEAR: I’m not saying NOT to care, of course we have to care. The way we look on the outside is a direct result of what we put on the inside.

My job is to coach men & women on how to get their dream body with plant-based foods. The end result being to “look good”. But not just LOOK good, also to FEEL good.

Health isn’t just about the way you look, it’s also about how you feel inside.

What about the ingredients inside? The ingredients that either benefit your health or don’t? Which in most cases, they don’t!

Yesterday at the store I saw a “caramel flavored syrup” & it was 0 calories… like WHAT that is not normal

The ingredients were all a bunch of chemicals combined marketed as “healthy” because it’s “0 calorie” or “keto friendly”… lets not be fooled my friends.

Food is fuel & toxic chemicals are not fuel.

🌱 Fuel are FRUITS, VEGETABLES, LEAFY GREENS… COLORS! Food in it’s full form directly out of the ground.

And YES you can still look good eating all these foods & not restricting yourself to protein bars & eggs just because it “fits the macros”.

It’s a win win with the whole foods. You can look good AND feel good. And you’re preventing health risks, prescriptions & hospital bills in the long run.
