Pastina soup, or as some call it “penicillin” soup. Although, that is just a negative association for me. 🤪
-6 cups low-sodium chicken broth
-1 medium yellow onion, sliced into large pieces
-2 carrots, peeled and sliced into large pieces
-2 celery ribs, sliced into large pieces
- 1 parmesan rind (about 2-inches long)
-Kosher salt to taste
-1 ½ cup of any tiny pasta variety, like alphabet, orzo, or acini di pepe- I used gluten free orzo
-1 tbsp each of thyme, tumeric and garlic powder
-¼ cup finely chopped parsley or cilantro, for garnish
-Grated parmesan cheese, for serving
Instructions:
Simmer the broth. In a large pot with a lid, stir together the broth, onion, carrots, celery, parmesan rind, seasonings, and a pinch of salt. Turn the heat to high to bring to a boil, then lower the heat and cover. Simmer until the vegetables are very tender, 20 to 30 minutes.
Puree the vegetables. Discard the parmesan rind, then use a slotted spoon to transfer the vegetables to a food processor or use an immersion blender. Add a couple ladles of the broth and blend until the vegetables are fully smooth. Scrape the purreed vegetables back into the pot.
Boil the pasta. Turn the heat to high to bring the broth to a boil. Once boiling, stir in the pastina. Cook until the pasta is tender, about 3 minutes or so. Remove the soup from the heat.
Serve. Taste the soup and adjust seasoning, adding more salt if it tastes flat. Ladle the pastina into serving bowls. Finish each bowl with a sprinkle of parsley and grated parmesan cheese and serve hot. Add boiled chicken (shredded) or rotisserie.
Fruits have their seasons! I used to always grab my normal go-to fruits, but as I started to buy more organic (when available,) I paid attention to the quality and availability. This chart is helpful, but you will also notice what is in abundance at the store and what looks best. Buy fruits in season and they will taste so much better! I am so sad to see 🍑 season come to an end, but these organic Botlett 🍐 and Honeycrisp 🍎from Costco are so tasty 😋 It’s the same for veggies too!

I made this yummy cauliflower rice today to eat with my spaghetti sauce. I used a frozen bag of cauliflower rice, sautéed it with chicken broth, garlic powder, green onions, cayenne, salt and lemon pepper. Great flavor for a side dish or with a sauce! I added a bit of Parmesan to the top. 🥫🍚

I have a really hard time spending money out on fancy coffee drinks, when it’s totally possible to make it at home! Finally tried BBB and had awesome service. My husband’s meal, the fried oyster scramble was the most star 🌟🤤 Their house-made hot sauce is something I may try and replicate! It was great to see that spot thriving again ☀️
Healthy meals don’t have to be complex. Pan seared chicken breast seasoned with bbq rub, yellow tomato from my friend’s garden .lovelace47 topped with green goddess blend and balsamic glaze, and some avocado with salt. Great combo of protein, fat and carbs!

Old Bay Egg Salad 🥚🦞
•6 hard boiled eggs
•3 tbsp mayo
•1/4 tsp salt or more to taste
•black pepper to taste
•1/2 tsp of Old Bay Seasoning
•1 tbsp sweet pickle relish with juice
•1 tbsp capers or more to taste
