A tasty bowl on a spring day – what could possibly taste better. This easy recipe serves four.

1 tbsp olive oil
1 onion, chopped
1 clove garlic, minced
400 g sweet potatoes, peeled and cut into cubes
100 g black beans, boiled
7 dl vegetable stock
2,5 dl salsa
salt, black pepper lime juice

Heat up the oil, fry onion and garlic until soft, add the sweet potatoes and stir thoroughly. Add stock and boil for 15-20 minutes, until the potatoes are soft. Then, add salsa, black beans and salt and pepper to taste. Finish up with some lime juice, serve and enjoy!
