Birria tacos 🌮 Made of delicious Mexican stewed beef, first marinated in in an adobo made of vinegar, dried chiles, garlic, and herbs and spices. Then braised in broth. Served with fried corn tortillas, the meat, Mexican Oaxaca cheese, and consome garnished with diced onion and cilantro.

It’s spring, or so I’ve been told with the amount of rain we’ve been getting. So yeah, spring brings us lamb, peas, mint, gnocchi, and cauliflower.
