I’ve had an amazing opportunity to work with one of my all time favorite distilleries on something very special. It will be released this Friday at 11:00 AM EST, and I can not wait to share this with you! 💙 More details to come!
Is it the magic of Knockshee, the fairy mountain, or is .carty.12 a whiskey making wizard? Either way, this is another stellar example of what stunning whiskies are made at !
This gem is 75% Irish Grain and 5% Malt Irish distilled in Ireland, with the remaining 20% Irish Malt distilled in Northern Ireland. The combo of the single grain, and single malt started in ex-bourbon and then were blended and transferred to sherry butts. Then, Wizard Brendan married it with another ex-bourbon single malt before finishing it in tequila casks.
Notes of brown sugar (like freshly made wet brown sugar) and yellow granny butterscotch candies fill the nose, with the palate rich and thick with freshly cut wood (like pine trees) and saddle soap, followed by a very herbaceous note of freshly picked herbs from a just rained on forrest floor. Gives me the shivers!
I know I’m like a broken record, but if you haven’t tasted anything from Killowen, I encourage you to change that ❤️
and I just had the pleasure of tasting .rum and it was so good I had to tell you about it!
Aged for 12 years in ex-bourbon casks in the central province of Nakhon Pathom in Thailand, this viscous and additive and coloring free rum is a viscous treat on the palate!
The nose is over ripened banana and prune twizzlers, with a waft of leather and saddle soap, followed by candied apple with nuts. The palate sings all of those notes straight into your gullet with more banana mash and leather. The finish is dry and lovely and just completes this tasty little treat in the perfect way!
Rum is something I’m still exploring and to have the opportunity to taste this is pretty freaking cool, and cements the fact that I have a lot more exploring to do. ❤️

It’s giving musty red grapes on an old wooden bench that’s been recently oiled, stuck inside of an extra dusty dunnage warehouse in the height of summer. It’s divine!
I fell in love with The Echlinville Distillery on my trip with ! Located on the stunning 23 acre Echlinville Estate, this family owned, grain to glass distillery is making some seriously exceptional whiskies. Every single drop I tasted I was just enamored with from the farmy vanilla Greek yoghurt new make to the lush and hella viscous Tawny Port cask I had the pleasure of burgling! They grow all of their grain in Portaferry and even go as far as to floor malt said grain and send it on a low and slow journey of distillation.
On top of their Echlinville portfolio, they also brought back Dunville's Irish Whiskey which fell silent in 1936. I had the pleasure of tasting a few of these and they are all stunning! Dunville’s is sourced liquid + their own spirit and it undergoes an extensive finishing process. And extra bonus points is that it’s completely transparent!
And lastly the Old Comber Whiskey brand has too been brought back to life after 70 years of silence, which is pot still deliciousness and one you should definitely try if you find it!
With the distillery crafting their own exceptional whiskies (and gin and poitin!) they too have brought back some of the lost whiskey brands of Ireland! So they are not only preserving the rich distilling history of Ireland, but they are also making a very rich history of their own.

Killowen Barántúil is a dream. It’s like a peated chilled apricot date jam, ooey and gooey, but also fresh and almost cooling on the palate. Notes of toasted macadamia and black tea and pipe to***co rush into the finish, leaving you yearning for just one. more. sip. One of my favorites of this year! 🤤

Holy industrial-sooty-new engine oil spilled in a garage on the seashore-viscous-peaty-lemon dilly- dirt kicked on hot ash- goodness! The label would have turned me away but a little birdy told me it was a belter and he wasn’t lying! And at 60%, yes please! Good reminder to not judge a book by its cover! I’m a happy gal right now 🤤

Saying goodbye isn’t always easy, especially when you’re leaving people you love. After almost 5 amazing on and off years, I have made the decision to leave my role at The Scotch Malt Whisky Society. It has been a transformative time in my life, and one I am so beyond grateful for.
I have met some remarkable humans, drank some stellar whiskies and hosted many whisky lovers on their journey through single cask whiskies. The lessons, the knowledge, the growth and most importantly the relationships I have experienced in these years is priceless. To the members, thank you for your friendships, I am just beyond grateful for the ride with you all!
I’m not leaving whisky (I could never!) it’s just time for a new challenge, new goals and new adventures, and I am excited to share what those are so stay tuned!
And lastly thank you to for taking a chance on me all those years ago. And to for being the best partner through thick and thin, and lastly for always being my sunshine on both sunny and cloudy days!

Last year I had the pleasure of working with on their new 21 and 25 year releases. I have to say I enjoyed them both SO much. This was the first whisky my mum actually enjoyed with me and I’ve been trying to get her to enjoy a whisky with me (that isn’t PB flavoured) for almost 7 years! Plus my cask strength loving husband enjoyed this right along with me. I was able to share this whisky with so many people and it brought me so much joy to do so!

My love of Irish whisky knows no bounds, it’s truly a great joy in my life. When in West Waterford asked if I’d be interested in tasting 4 mash bills inspired by the mid 1800’s to early 1900’s I couldn’t resist! Here are my thoughts below:
No. 8: (1908) Big malty nose, and twirlers! Palate is perfumed, with some hints of chocolate and more malt. Think malted milk balls.
No. 15 #: (1915) The nose was orange and honeysuckle, followed by tropical fruits (mango/ banana). Thinner viscosity.
No. 38: (1838) New make apple pie and green apples. Grass and pear tart with ritz crackers followed on the palate. This had the most spice out of the 4 and longest finish.
No. 93: (1893) A big softy. Soft peat, leather and oat cakes. Palate matches perfectly, like softly peated oatmeal and honey. Great viscosity!
These four whiskies are to be somewhat of a manifesto of intent, and I think they are off to a good start! To pull mash bills of the past and bring them to life is quite exciting, and I look forward to tasting more of Irish whisky’s past in the future of !

Trying to work through the many open bottles in this house, and I have to say I’ve always enjoyed this whiskey. The nose has a slight “freshly opened pool@float” note that I absolutely love, and the rest is so farmy it’s like swimming inside of a barn. Horse grain, honey and oats bloom out of the glass and the palate is creamed honey and biscuits with a little rum note in it that’s just really lovely!
Plus, I’m convinced it makes the best Irish coffee!
It’s been on my list of blends to taste, along with 100 Pipers, Ballantines and so on. I’ve realized over the years that I’ve tasted many of the single malt components to a lot of these blends, but have never actually tasted the blends themselves! I knew I had to change that!
With Ardmore being it’s main component, it makes a valiant attempt at hitting all the spots but just in a mildly watered down kind of way. The nose was more expressive than the palate, but to be honest, it will probably make a delicious highball. Not mad at this purchase, and am very glad to have finally tasted it! What are some of your favorite blends?
🐽: honey, dried grass, a little hairspray and a very light dose of peat. Smells a little new-makey with some under-ripened pears.
👅: it’s quite creamy, a little sooty (like water in an ashtray?) mild sweetness, but not getting much more. To be fair I’m comparing to some stellar single cask from Ardmore, so I’ll revisit again and in a highball for sure!
Finally got to see it on the big screen and it was 10x more emotional than it was when I saw it at home.
