Taco Monday!

Cauliflower rice topped with lettuce, tomatoes, taco meat, guacamole, and salsa.

The taco meat mixture is 93% lean ground beef, onions, minced garlic, taco seasoning, salt, pepper, sweet peppers, and a bell pepper.

Sweet potato chili for dinner. So good everyone in the house ate it for dinner.

All you need: ground beef, onions, bell pepper, sweet potatoes, tomato paste, tomato sauce, chili powder, mustard powder, cayenne, and water. I added some tapioca flour at the end to try and thicken it up a little.

About dinner last night...

Flank steak marinated in coconut aminos then cooked with coconut oil, ginger and garlic.

Brussel sprouts coated in EVOO, salt and pepper then roasted in the oven along with Pederson's Farms sugar free bacon.

Cauliflower rice mixture with onions, shredded carrots, broccoli, and some eggs scrambled in with coconut aminos, garlic powder, cayenne, and some kosher salt.

Day 9 – Whole 30 26/04/2017

Today was the quarterly day of service at my office which meant I spent my day along with my coworkers serving a local charity. My task was landscaping which shamefully is more activity than I've done in awhile. There were major temptations there...donuts, chips, non-complaint lunch times, an ice cream sundae bar. It was mildly disappointing but I was really happy that my desire for them was minimal to none. [ 81 more words ]

Day 8 – Whole 30 24/04/2017

Today was epically busy and very successful. I e noticed a sharp increase in my activity the last 5-6 days. A few weeks ago I struggled to get 4K steps a day, now I'm nearing 6k a day. Despite getting little sleep last night I have been energized all day and haven't needed or wanted caffeine even once. Those non-scale victories are awesome. We've found recipes that will become household staples, I've learned a ton of new recipes, clothes are already fitting better, and I've mastered the art of perfect homemade mayonnaise. Sometimes life gets in the way and makes things more challenging than necessary. Today was one of those days. I found myself in probably the worst spot for any Whole 30er. I was hungry, not at home, without any snacks on hand. Temptations were everywhere. Add to these elements I was stressed and upset, a time I would always go for the worst food options. Today I was cranky. If I'm honest with myself it set in yesterday. Now the comments of days 4 and 5 being "kill all the things" totally makes sense. Tonight's dinner: Whole 30 Shepherds Pie. Mashed potatoes were made with ghee and coconut milk, veggie and meat mix was simply onions, carrots, celery and lean ground beef.

Veggie loaded breakfast casserole! Threw this random concoction together last night and it turned out beautifully. I layered the bottom of a casserole dish with thinly sliced potatoes and let that bake while slicing and cooking onions, mushrooms, celery, zucchini, yellow squash, and carrots. The whole thing was topped off with a seasoned egg mixture.

This gem is both Whole 30 and Paleo compliant.

Got adventurous this evening and made some Whole30 homemade basic mayo. Then, (not pictured) went rogue and created a fun and spicy sauce to add to our stuffed bell pepper lunches.

Basic mayo recipe (credit: Whole30 Recipes)

1 1/4 cups light olive/avocado/sunflower oil...don't use EVOO
1 large egg at room temperature
1/2 tsp mustard powder
1/2 tsp salt
Juice of 1/2 lemon

In a blender or food processor mix 1/4 cup of the oil, egg, mustard powder and salt. Mix thoroughly then slowly begin adding remaining cup of oil. Once mixture is completely and fully emulsified, add the lemon juice slowly. Refrigerate.
