Mĕx-kal (Which is Aztec for “Mezcal”) has been produced in Mexico since the arrival of the Spaniards in the XVI century, same who brought the "Old World Distillation Process" to the ancient civilizations of the Americas. For many centuries, Mezcal production was perfected, passing the ancestral techniques from generation to generation. Centuries later, other Agave spirits, such as Tequila and Soto
l, evolved from this original recipe (For this reason, Mezcal is commonly referred to as “The Grandfather of Tequila”) resulting in a new, more sophisticated way of producing the once strictly artisan spirit. Those that remained loyal to their old ways, persisted so that original Mezcal distilleries could be set apart from the new ones that now had different methods of elaboration. A few years later, the official Mezcal Denomination of Origin was born, providing a much-needed protection to this important cultural legacy. To this date, only such Distilleries found inside these regions are the ones that can only produce authentic Mezcal.
