Just some thing I put together and want to share.
Had a taste for tacos tonight. These are baked/fried in the oven. Very reminiscent of Jack-in-the Box tacos.
A bit different, but really good n crispy, yet soft.
Using your favorite corn tortilla, baste each side lightly with your favorite oil and bake at 400 degrees for about 3-4 minutes, flip and bake for about 1 minute. Watch that they don't get too crispy. Remove and put your favorite taco meat and one and threaded cheese on the other and bake until cheese is melted 2 minutes (?). The tortilla should be crispy, bubbly yet still payable. Fold and add your favorite toppings.

I don't always do left- overs....but when I do. I carefully and tightly wrap them up and hide them in the refrigerator. Then throw them out a week later.
