Thai Style Vegetable & Chicken Curry atop Jasmine Rice

Pick yourself up some of this curry sauce the next time you’re at because it is about as good as the Thai restaurants 🔥

Making this was easy peasy, I combined frozen peas, frozen broccoli & cauliflower, and diced bell peppers into a pan and sautéed them (not too much, you still want a crunch). Then I added some rotisserie chicken and the curry sauce to the mixture. Once heated, I put it atop steamed Jasmine rice! All I was missing was some naan bread - next time 😉

Fats: sauce & chicken
Veggies/Fiber: bell peppers, peas, broccoli, cauliflower

I just found my new favorite salad combo for spring! This salad doesn’t only taste delicious, but it is packed with so many nutrients - Look at all those colors! 🌈

🥬 English cucumbers
🥬 2 soft boiled eggs
🥬 Ranch

Hummus is a great plant-based protein option. It’s also great to use for a veggie dip if you’re not a big fan of veggies!
