eggs lightly whisked , in a hot pan with roasted garlic oil , topped with spinach , ham and mozzarella cheese, lid on for 1 minute, slide off the plate - serve with tomato chutney.

Take a packet of noodles , a few premade dumplings , some Asian veg, a spoonful of chilli oil & lunch is sorted .

If you got 15 minutes you can whip this up.
I used udon noodles , 3 eggs , 2 tomatoes , 2 shallots, 2 cups chicken stock .
Serve with extra shallots and dollops of chilli oil .

This is passion fruit and yoghurt loaf .
Delicious!
A great change up on my normal banana bread - plus the passion fruit is so juicy and sweet at the moment .
Perfect as is with a passion fruit icing that melts in- straight after baking / or you can top with mascarpone.

Slippery noodle stir fry!
Season pork mince with tamari & oyster sauce, sesame oil
Fry off over high heat
Add
Chopped garlic , shallot and ginger
Add fresh rice noodles
1/2 bunch chopped Choy sum
About 1/2 cup of chicken stock or water and place a lid on top - and steam noodles and veg for 2 minutes .
Stir in some extra tamari, chilli oil .
Serve topped with Thai basil and slurp.

This morning Sally and Ming sent me home with a new version of their delicious GF spring rolls.
Super crunchy and that same moorish filling .

With chilli and chive dipping sauce .
I used Chinese broccoli, cabbage, zucchini,shallots, garlic. Sautéed with oyster and soy sauce , sesame oil. Tossed through some cooked rice noodles.
All wrapped up in a rice paper , pan fried till crisp.
New fave snack .

It’s no secret I love tomatoes .
And at this time of year they are so delicious, all they need is a simple salad of sliced tomatoes, torn burrata, thinly sliced white onions, extra virgin olive oil, Champagne vinegar, sea salt & cracked pepper and some micro herbs .
