BRIT BEET Tip✨ This is one of the beautiful hand-painted ceramic plates that we chose from our friends , a 550 year old ceramics family business, nestled in bella Perugia, Italy.


These plates hold such a special place in our hearts as they bring back the happiest memories of our family celebration in Italy for my parents’ 60th wedding anniversary, two years ago. We brought your plates back as a lasting memory.



Honestly, it’s nearly impossible for whatever I cook, not to look wonderful when placed on your exquisite pieces of art.


We know how tough this pandemic has been in your country and for many small businesses such as yourselves, that rely heavily on tourism and a healthy North American economy, but your legacy lives on ... we thank-you everyday for the beauty that you have bestowed on us.

After washing my beets, I cut them into quarters (skins still on)and then layer them in my steamer instead of boiling them, to keep more of their precious nutrients. After 30 minutes, I peel off the skins (getting very messy hands) and that’s it! Add your own touches... pumpkin seeds, avocado, peppers, arugula - whatever takes your fancy😎

Sweet inspiration.
BRIT BEET Tip✨ You know when you have that urge for something sweet? Well, that was me last night! So I did a quick hunt around my pantry and discovered a jar of apple butter, some hazelnuts and rolled oats ... that became my sweet inspiration💓

So pleased with how these cookies turned out with ground hazelnuts, oats, spelt flour, maple syrup and coconut oil and a big dollop of that ooey, gooey apple butter! 🍏

I use a lot of oats in dessert recipes ‘cos they bind ingredients together well, are filling and are an awesome cholesterol buster!

Update: When I came into the kitchen this morning and opened the cookie jar (just for a peek ofc), 3 lone cookies looked up at me. Guess I should have doubled that recipe😋

Dinner ideas?
BRIT BEET Tip✨ How about a simple salad?! Last night, I threw a few organic mixed greens in the bowl (good source of antioxidants), some sliced cucumbers (brilliant to help us stay hydrated) and my favourite fruit, the silky and decadent avocado, for those heart-healthy fats💚 I then topped it all off with a lemon, garlic, dijon mustard, extra virgin olive oil and sea salt dressing. I also steamed some beets, (cut into quarters as they cook much quicker) and made veggie gluten-free pasta (veggie stock, olives, onion, garlic, nutritional yeast, arugula, lemon juice and celery salt.) Happy to report, I got only happy faces! Simple AND delicious😋 and I hope it gives you a little inspiration for you dinner tonight. 💚

Here’s a peek of what must-have items I’ve got in my self-isolation fridge! ✨
BRIT BEET Tip: I’m doing a lot of soaking of oats for morning porridge bowls and of dried beans (really good money savers) so I can have them on hand for making hummus, dips, soups or just to throw in a sauté pan with coconut oil and spices. Honestly, beans are THE best - such a great source of plant powered energy and full of fibre to keep tummies full!

A top staple is my bone broth (link to recipe in bio) for immune strengthening and ‘cos it just so comforting to sip on.

Got the gluten-free flours stocked for making cookies (lots of requests) ... going more grain-free at this time can help lower our inflammation and support gut and immune health so I’m all about that!

Bowls of pre-cut fresh fruit for sweet snacks (pineapple, watermelon 🍉) plus hubby sweetly pitched in and sliced up a batch of veggies for quick stir fries/side dishes (thanks darling) which is so handy when I need to get dinner on the table in a hurry! Lots of greens cos I love them with everything 🥗 and then 2-3 days of assorted veggies especially root veggies for making soups, roasting or to steam for supper with some ghee/EVOO and aromatic herbs 🌿

Can’t go without my coconut yoghurt for my morning smoothie bowl or my kimchi - that always goes in hubby’s and my lunch box - another wonderful immunity food that’s always stocked in my fridge.

Nuts, cos they’re great for snacking on (in moderation😜) and if I’m feeling adventurous I’ll make nut butters, YUM!!

Are nuts and seeds a large part of your diet?
BRIT BEET Tip: Like many of you, I’m nuts about nuts and seeds! However, we need be mindful NOT to consume them in large quantities, especially now. Why? Nuts and seeds contain arginine (an non-essential amino acid) so when we eat them in large quantities this can put lysine (an essential amino acid) out of balance. The issue here is that lysine is strongly anti-viral and we always want to keep our viral defences strong, especially during this Covid-19 pandemic.
So, let’s keep enjoying our nuts and seeds, but in moderation💚

Recipe testing day!
BRIT BEET Tip: It’s my hubby’s birthday so I made him a cake ‘cos I adore him (plus any old excuse to test out new recipes) He’s a citrus and almond kinda guy so that’s my starting point for flavour. I’m testing flax eggs and I’m switching the EVOO for anti-inflammatory unrefined virgin coconut oil ‘cos it has a rich and creamy texture - perfect for a moist cake. Fingers crossed he’s going to love it.
Update: My Citrus Almond Cake (official name) was a hit! We’ve both been stealing slices on the sly - this has to stop!! Guess I’m keeping the recipe. :)

Nothing fancy - just simple ingredients like lentils (plant protein) onions, garlic (both antibacterial), rosemary (antibacterial), mushrooms (good vitamin D food source in winter) lemons (vitamin C to chase the bugs away) and whatever salad greens (antioxidants) you have to hand. Throw it all together and you get many bowls of deliciousness not to mention, you’ll save a pretty penny!!

With no time to run to the grocery store for spices, I had to use their store bought curry powder which never tastes as good as making your own! The saving grace came when I discovered some cardamom pods, fresh ginger, garlic, cinnamon sticks and fennel seeds - now we’re talking!

BRIT BEET Tip: when travelling until I visit the local health food store to stock up on my fav clean/green products. Today, compliments of , I enjoyed their MOST delicious in-house fresh pressed juice made from organic celery, lemon, apple and aloe vera, a beneficial gel gathered from the leaves of the aloe vera plant. Research shows that drinking aloe vera gel helps boosts immunity. So this green elixir is the perfect antidote to my trans Atlantic flight with sneezing passengers!

Packing up a picnic!
BRIT BEET Tip: These mason jars are a fab way to pack up picnic meals. I was catering for 3 couples so I made each couple their own Basil, Sun-dried Tomato & Red Pepper Pasta Salad in a jar. Mason jars are my absolute favs ‘cos you can showcase the food in all its colourful glory and they’re so much more glam than a plastic container. Best of all, with no leaching of toxic chemicals into the food, I can always feel good about that!
