Wash and cut up fresh fruits and veggies over the weekend, and store them in air tight containers.

I’m trying not to keep too much processed junk food in my house because I realized that’s what me and my kids normally grabbed for snacks. So now when we get the munchies we go to the fridge instead and eat something healthy.

This past weekend I washed and cut up strawberries, cucumbers, pomegranate, bell peppers, and grapes. For school snacks I always give either a fruit or vegetable, so this has also made packing their lunchboxes a breeze!

My younger 2 will eat most veggies without a prob, but my oldest hates them. But she absolutely loves hummus, and Costco sells little organic hummus containers. So she’ll usually dip her cucumbers, bell peppers, and other veggies in hummus to cover up the taste 🙂

Lunch today was a bed of arugula topped with goat cheese, balsamic reduction, roasted cauliflower with nutritional yeast, baked sweet potato fries, shredded cabbage, spoon of tahini, baked chicken with cilantro sauce, olives, and tomatoes.

And yes, I did throw everything from my fridge into a bowl and it turned out to be delishhh!
