Our cat, Miles had recently been disgnosed with diabetes and therefore, a change in diet and insulin injections are part of his daily routine.
As a result, I found another great use for my 1/4 sheet pan and silicone liner by prepping portion size bites of pumpkin puree to freeze and take out daily for adding to Miles food. This tray of a good size 1/2 tsp portions barely made a dent in the tin size, so I froze the other half for scooping later. I’m sure he’ll like the frozen puree on these warmer summer days.

😸Fun fact:
Pure pumpkin (not pie filling) can aid in a cats digestion and help with hairballs, constipation and diarrhea. No more than up to 1tsp once or occasionally.

It’s Rhubarb season!
So I made some strawberry rhubarb crepes this morning. My secret ingredient was the cinnamon and it was so good!

Tip: I needed 2tbsp of lemon juice and zest of lemon, so I juiced a bag of fresh lemons and zested them into my silicone muffin pans, froze them into 2tbsp portions and put in a freezer bag for later use.
✅So handy for lemonade, baking recipes, marinades and salad dressings. I no longer have to worry about not having fresh lemons on hand.

🫶The Lemon Garlic Chicken makes a great marinade for grilled kebabs. Just chop chicken, add to freezer bag with ingredients, mix and freeze and defrost overnight in refrigerator. Then skewer and bbq when needed.

🫶Same with chicken souvlaki pkg, love this seasoning and a 1tbsp of chicken bouillon added and baked with potatoes or rice or as a marinade.

I find that half the battle is knowing “What to cook”?

Once you know that, then having a few simple staples in your pantry, shop the grocery specials, then a plan comes together.

When you cook at home, you actually do save time and money! If you find it hard to plan ahead the whole week, start off a few days planning. When you cook dinner one night, maybe prep steps for another night.
A few steps ahead make things a lot easier.

This sticky orange chicken was a nice change in dinners and the secret addition to the flavour was the Red Pepper Jelly that I added for a saucy dish with rice.

A delicious Thai inspired dinner whipped up by one of the boys this week.
I know everyone enjoyed it as I got asked if there were leftovers the next day. 😎

So easy to make and loved the fresh sauteed green beans and spinach mixed with the ground chicken, seasonings and rice.

Definitely making this one again! 👍👍

Taking turns cooking dinner in our house has been a win win!
Tonight, one of ours son’s made these delicious Italian meatballs and rose sauce with pasta. Definitely 👍👍 up!
The meatballs had great flavour and the rose sauce was a nice change.
We will definitely be making these again. 😋

Time to make some comfort foods. Tonight will be Ramen noodle soup.

Ramen Noodle Bowl Per serving: Calories 410, Fat 9 g (Saturated 3 g, Trans 0 g), Cholesterol 75 mg, Sodium 180 mg, Carbohydrate 44 g (Fibre 7 g, Sugars 4 g), Protein 39 g.

When you are looking for comfort foods on chilly days, here’s a great one that I make with Epicure’s Home-Style Chicken Stew. Epicure’s gf biscuits make for a great side to soak up the gravy like stew. You could use the same filling for a meat pie too.

My short cut is short on prepping and not on flavour. 😊

❄️ I chopped 2 cups carrots & 3 cups potatoes and precooked them together in epicure’s microwave steamer. Cuts meal prep down by half and retains all the flavours by steaming them and not boiling.

❄️ Picked up a cooked rotisserie chicken and peeled it off the bone and chopped into bite size pieces. This is a great time saver too. Freeze for later uses like when making a soup or stew, money saving tip$$.

❄️ Portion a cup of frozen peas and put aside to add when everything is almost ready to serve.

❄️ Mix Epicure’s Homestyle Chicken Stew pkg with 2 cups of water and set aside.

❄️ Sautée onion in large Everything pan or pasta pot. Add cooked chopped chicken. Add soft steamed potatoes and carrots and then add seasoning with water, stir and bring to a boil.

I had double the chicken, veggies and needed to use 2 pkgs, therefore doubling the water to a total of 4 cups.

I added 2tbsp of chicken broth seasoning instead of salt for more flavour.

It was a hit!
You could make and serve a batch of gf biscuits with this dish too.

Love this time of year for baking & gifting!

Tried a twist on Epicure’s Shortbread package.

1. Topped the shortbread recipe with this delicious Tangerine & Red Chili Jelly. An unexpected sweet little bite.

2. Chopped up Skor candy bites into pieces and mixed into the shortbread batter.

Both recipes turn out great every time using my silicone molds. I bake a few minutes longer than pkg and let cool before removing from the pans.

Note: I prefer to lightly grease the pans with a basting brush and melted coconut oil. Great results every time.

Love when an idea, turns into a delicious meal!
I wanted to make Greek meatballs stuffed with a piece of feta cheese and I’m so glad that I tried it and it was soo flavourful!

Definitely going to make these again!

I used 2 pkgs of ground chicken
2 eggs
1 pkg Epicure crispy & crunchy pkg ground finer.
1 pkg Epicure souvlaki seasoning
1 tsp chopped garlic
Salt & pepper to taste
2tbsp balsamic vinegar

1 cup cubed feta cheese for stuffing meatballs.

Roll and bake meatballs at 400 degrees for 35-40 mins.

Serve with power bowl salad or rice and veggies.
Definitely a flavour bomb! So good!
