PEANUT PAD THAI 🥜
and I cooked up a MEAN lunch today, and it reallyyy hit the spot 🤤
Method:
In a large skillet, cook 3 large heads of bok choy (sliced into smaller pieces), 1 large diced bell pepper, half a chopped onion, a handful of mushrooms, a handful of cashews, and a 1 inch cube of ginger (diced) in 1 tbsp of your choice of oil. once the veggies are tender and almost cooked thoroughly, time to add the sauce!
add 2 tbsp of soy sauce, 2 tbsp of peanut butter, 1 tbsp red vine vinegar or balmasic vinegar and 1 tbsp black pepper.
Now add in cooked rice noodles, and top with your choice of protein 💪🏽 tofu for us today!
SAVORY OATS 🍲
Usually I smother my oats in nut butter, fruit, or anything under the umbrella of SWEETness. But not today💁🏻♀️ ~
These steel cut oats are topped with portobello mushrooms, chopped kale, purple olives, diced onion ~all sautéed in coconut oil, paired with a fried egg🍳 sprinkled with h**p seeds, crushed red pepper flakes, my FAVE seasoning ever southwestern mix, and a drizzle of olive oil.
Wow what a mouthful😂 sounds a bit fancy but realistically threw whatever I had on hand into the frying pan and called it a morning.
I think I will always be but i little savory is always nice too😉
CHOCOLATE PEANUT BUTTER CUPS 🍫🥜
Think Reese’s Peanut Butter Cups but more rich, decadent and way healthier 😉
Method:
Combine 4 tbsp raw cacao powder, 4 tbsp (solid) coconut oil, and 1 & 1/2 tbsp maple syrup. Either heat on stovetop in a small saucepan for a few minutes or for a faster method, heat in microwave for 30 seconds.
Pour half of this chocolatey sauce into 6 cupcake holders. Freeze for 45 minutes. Remove from freezer and scoop 1/2 tbsp of nut butter on to each one, then pour the rest of the chocolatey sauce on top of the nut butter (you will likely need to reheat it). Sprinkle cacao nibs and a little sea salt on top and freeze again for another 45 minutes.
These are quite decadent so feel free to cut into smaller chunks. A small piece goes a long way!

Another snow day here in Guelph! Celebrating the with a cooool mocha smoothie bowl, and I wouldn’t have it any other way!

Method:
Combine 1 frozen banana, 1/3 avocado, 1 tbsp of raw instant coffee (or 1/4 cup of black coffee) 2 tbsp protein powder (chocolate or vanilla would both work) 2 tbsp ground flax seed, and 1 tsp cinnamon and blend together until smooth. ~
Top with cacao nibs, almond slivers, raspberries, cinnamon, creamy almond butter, and coconut yogurt

vegetables (except cucumbers) are all cooked in coconut oil, topped with coconut flakes and h**p seeds✅
drizzled some balsamic vinegar dressing on top for that extra zingg 💥

We cooked up some classics for our thanksgiving dinner tonight!
~mashed potatoes with gravy 🥔
~roasted beets, parsnips, & carrots🥕
~cranberry stuffing🍒
~steamed broccoli 🥦 (shoutout to for that)
~and in replacement of 🦃 i had marinated tofu in a southwestern seasoning🥘
oh annnd a slice (or 2) of blueberry crumble with greek yogurt for dessert😉
been a minute since i’ve bananazforbananazed! but HELLO i’m back😏
my pals at inspired me with their sassy lookin plates, i just had to jump back onto this account🤤
today i fixed up a CURRY TOFU SCRAMBLE😮 oh the flavours, the falvours in this one will have your tastes buds doing the tangoooo💃🏻
recipe detes🍽
3 garlic gloves
1 handful chopped onion
1 handful fresh spinach
1/4 cup lentils (or chickpeas)
1/2 cup firm tofu
1 handfuls green beans
1 tbsp curry powder
1 tsp cumin
1 tsp paprika
1 tbsp coconut oil
1/4 cup cashew milk
sprinkle of coconut flakes
salt + pepper to taste

sauté onion and garlic in coconut oil for a few minutes, then add in crumbled tofu and cook for a few more minutes...then since i was super hungry and impatient, i added basically everything else to the pan at once😁 let simmer for a good 10 minutes. then BAM💥 done. sprinkle with coconut flakes, salt and pepper and you’ve got yourself a fineee meal 🙏🏼

we’ve got some zucchini, red pepper, mushrooms, sweet potato, lentils, feta cheese, pumpkin seeds and coleslaw all cooked in coconut oil, lemon juice and a sweet basil seasoning! and a scoopidydoop of red pepper hummas and coconut shavings on top😋 peep my insta story to get the full run down of how i whipped up this easy meal!! 💃🏻👍🏼

i know. you’re probably thinking, why tf are you’re noodles purple maddie 🤔 well friends, this ain’t no ordinary pasta... it’s made solely of black beans! I used Zeroodle Organic Black Bean Spaghetti and these noods have MORE fiber, protein, iron and LESS cals than regular wheat pasta! sure they may look a little weird, but just like people, the weird ones are always the best🤷🏻♀️

all you need for the sauce is peanut butter, teriyaki sauce, and and sesame oil- (about a tbsp of each should do) and BAM you done👏🏼i’m all about them quick and easy meals 😎
