I had a hard time finding a recipe that matched what I remember eating in Florence so many years ago so I decided to try and recreate it myself. I hope your family enjoys it as much as mine does! Here is a veggie side that is not only delish and kid friendly, but takes only 5 MINUTES to make. My son doesn't love regular corn, but he devours these bad boys. Give it a try and tell me what you! RECIPE BELOW.

BABY ELOTES-MEXICAN CORN:

Ingredients:
1 package of baby corn (approximately 18 pieces)
2 tbsp of butter
½ tsp salt
2 tbsp of light sour cream
2 tbsp of mayo
¼ cup of grated cotija cheese or grated parmesan cheese
smoked paprika to sprinkle
1 tbsp of chopped parsley

1. Heat butter in a large non-stick pan over medium high heat. When butter melts add baby corn and cover. Cook for 2 ½ minutes. Flip corn. Cook for another 2 ½ minutes then remove from heat.
2. While corn is cooling, mix the sour cream and mayo together well.
3. Once corn is room temperature, sprinkle with salt and place on serving platter.
4. Brush the corn with sour cream/mayo mixture.
5. Sprinkle cheese generously over corn
6. Sprinkle smoked paprika lightly over corm
7. Garnish with parsley and serve!

NOTE: Baby corn is a cereal grain taken from corn harvested early while the stalks are still small and immature. It typically is eaten whole – cob included – in contrast to mature corn, whose cob is too tough for human consumption.

Here are my recipes for the most delish ricotta meatballs and an easy cheesy pasta dish!

RICOTTA MEATBALLS

Ingredients:
½ lb 85% lean beef
½ lb 85% lean veal
½ lb 77% lamb
¼ cup of light cream
½ cup of ricotta
1 egg
½ cup of planko bread crumbs
1/3 cup of grated parmigian cheese
1 ½ tsp salt
1 tbsp chopped fresh basil
1 tbsp chopped fresh parsley

Preheat the oven to 400. Line a baking sheet with wax paper

1. In a medium sized bowl mix together planko bread crumbs, grated parm, salt, fresh basil and fresh parsley. Set aside.
2. In a large bowl mix together beef, veal, lamb, ricotta, light cream and egg.
3. Add the bread crumb mixture to the meat mixture and mix well.
4. Clean your hand and roll the meat mixture into balls. Space evenly on the baking sheet.
5. Bake for 20 minutes
6. Let cool and enjoy!!

EASY CACIO & PEPE PASTA RECIPE - Pecorino Romano cheese can have a bit too much bite for my children’s taste. So I’ve altered this recipe slightly for my kids taste.

1 cup of finely grated Parmigiano-Reggiano
½ cup of Pecorino-Romano
½ tbsp of crushed black pepper
¾ lbs of whole wheat spaghetti or tonnarelli

1. Start a large pot of boiling water suitable for 3/4 lbs of spaghetti
2. Combine the Parm Reggiano, Pecorino Romano and pepper in a large glass bowl.
3. Add at least 2 tbsp of cold water and mash into a thick paste. Add more cold water if necessary. Spread paste evenly and set aside.
4. Add your pasta to the boiling water and cook to aldente
5. Use tongs to transfer the pasta from the pot to the bowl with the cheese paste.
6. Stir the pasta quickly in the glass bowl.
7. Add a bit of starchy pasta water if the sauce looks to thick.
8. Serve and eat immediately!

THE ULTIMATE BROCCOLI RECIPE FOR KIDS!!!- Roasted broccoli spears topped with ricotta salata and herbed planko bread crumbs. These were described by my kids as the best veggie they have ever had!

Ingredients:
• 2 heads of broccoli. Break down the broccoli head into spears and then cut the spears in ½ lengthwise
• 3 tablespoon of butter or duck fat (duck fat can be purchased at specialty food stores)
• ½ cup of planko bread crumbs
• 2 tablespoons of olive oil
• ½ teaspoon salt
• 2 tablespoons of chopped fresh parsley
• zest of one lemon.
• ½ cup of grated ricotta salata or parmigiano reggiano

Preheat oven to 425. Line 2 baking sheets with wax paper.

1. Toss broccoli spears in duck fat or butter. Spread the broccoli spears in an even layer on the baking sheets. Roast in oven for 15 minutes.
2. In a bowl mix together the planko bread crumbs, olive oil, salt, fresh parsley and lemon zest. Mix well.
3. Heat a non-stick pan to medium-high heat.
4. Add the breadcrumbs and toast until golden brown. Remove from Heat.
5. Remove broccoli from the pan and add to a bowl.
6. Sprinkle the broccoli with the toasted planko breadcrumbs and the ricotta salata
7. ENJOY!!

ricotta with a sage butter cream sauce for the kiddos. I get salad 😏 countdown

: Mix 3/4 cup ricotta + 1/4 pumpkin purée + 1 lightly beaten egg + 1/4 cup grated parmigiana + 1/2 Tablespoon of olive oil. Add 1 cup of flour to the mixture in 2 batches to form the dough. Refrigerate for an hour. Roll and cut gnocchi. Drop gnocchi into boiling water. When they rise to the top, remove with slotted spoon. : melt 4 TBLSP of butter over medium heat in sauce pan. Add sage and reduce heat. Add cream. Add gnocchi. Serve immediately!
