It's National Cooking Day — time to impress your friends by making this hearty red quinoa salad, it's full of flavor and easy to make. See the recipe from Not Without Salt below.
2 cups quinoa
Sea salt
2 cups halved cherry tomatoes
8 ounces smoked or grilled salmon
1/2 cup feta
1/2 cup diced red onion
2 cups leafy herbs (chives, parsley, basil, mint, arugula, dill, etc.)
1/3 cup olive oil
1/4 cup fresh lemon juice
1 tablespoon lemon zest
Prepare the quinoa in salted water according to the package instructions. Add the quinoa to a large bowl and toss in the remaining ingredients. Taste and adjust seasoning. Cover and refrigerate until ready to serve.
