We spend a lot of time in the car going to appointments and activities so sometimes meals on the go are a thing. This is an example of what we packed for lunch on Tuesday… a veggie burger for the 2-year-old and salad with tofu for the 4-year-old and they each got a clementine and a cookie.
Here are all of the things for the salad in the previous post. This tofu is our favorite. It’s in the frozen section at and is the only place I’ve ever found tofu like this. It’s extra firm and not packed in water so you don’t have to press it and the texture is 👌🏼even though it’s frozen. I just dice it and air fry it in coconut aminos, garlic, onion, pepper, and cinnamon and it’s perfect for salads or stir fry’s or even on its own as a snack.
Todays lunch…. Cabbage slaw with edamame, tofu, slivered almonds, and a mix of a couple of different dressings. The boys ate this with me bite for bite.
For our first breakfast of 2023, we went a little special. We usually eat the same thing for breakfast every day but today I made vegan French toast with a blueberry compote which sounds fancy but really isn’t! Here’s my no recipe recipe:
For the French toast I just dipped bread in oat milk thickened with chia seeds and seasoned with cinnamon and vanilla extract and then pan fried it until golden on each side.
For the blueberry compote, I simmered frozen blueberries until they were heated and the juice reduced. That’s all. One ingredient and minimal work.
If your blueberries are tart or if you like things on the sweeter side you can add maple syrup or agave to the blueberries while they simmer and/or drizzle over everything once it’s plated.
We served with maple syrup drizzled over the blueberry topped French toast and for the toddlers, everything was cut into bite-sized pieces with the compote on the side so they could dip.
Super easy, super delicious, and it tricked the older toddler (4y) into eating the blueberries that he used to eat his weight in but now has decided are “yucky”.

How do you self care? Sometimes self care (to me) looks like a bath or a book or a workout. Sometimes it’s a healthy-stocked refrigerator with meals prepped and ready to go! If I have healthy options ready, I’m more likely to choose something healthy!
What does your toddler eat for lunch? Tomorrow for mine it will be strawberries, cucumbers, crackers, hummus, vegan cheese, and a mini muffin… a little healthy, a little fun, all delicious! Both of my boys (3.5y and 1.5y) love this lunch and it’s also an easy dinner when you need quick and easy and have nothing prepared! Finger foods and a dip are always and you can change up what goes in it so they can try new things. Feeding toddlers can be fun and easy!
