Sweet & Sticky Shiitake Mushrooms.

A mouth full of tastes and textures you’ll LOVE!

Shiitake mushrooms are rich in immune-boosting polysaccharides such as lentinan and other beta-glucans. These compounds bolster the immune system, protect against cell damage and boost white blood cell production helping to fight off viruses and other pathogens. The best part about these mushrooms is that they taste delicious adding an earthy, nutty flavour to dishes, making it easy to include these immune superstars in your diet.

Ingredients
240 g shiitake mushrooms rehydrated in water, sliced thickly
3 tbsp cornflour
1 tsp water
2 tbsp peanut oil
1 tbsp sesame oil
3 cm piece fresh ginger, finely chopped
2 cloves of garlic, finely chopped
4 tbsp dark soy sauce
2 tbsp rice wine vinegar
2 tbsp brown sugar
1 tsp sriracha
1 spring onion, finely sliced

Method
1. Place the mushrooms into a bowl, sprinkle with two tablespoons of the cornflour and mix, making sure the mushrooms are well coated. Adding the cornflower gives a meaty texture to the mushrooms.
2. Heat the peanut oil in a wok or pan, add the mushrooms and fry for 5 or 6 min, until they are cooked through and slightly crispy on the outside edges. Set aside.
3. Wipe the wok clean with kitchen paper and return to the stove on low heat.
4. Pour in the sesame oil, add the chopped ginger and garlic and cook for about a minute until aromatic. Sprinkle with the sugar and stir until caramelised.
5. Mix together the remaining 1 tsp cornflower with 1 tsp water in a cup. Increasing the heat slightly, add the cornflower & water mix, soy sauce and rice wine vinegar, stirring until the sauce thickens. Add the mushrooms and simmer for 2 min, ensuring they are well covered with the sauce.
6. Serve over hot basmati rice, garnished with sliced spring onion and a sprinkling of sesame seeds or you can add these sweet and sticky mushrooms to your favourite cooked meat.

Supporting your immune system is very important, just like being healthy, knowing how to improve your natural immunity gives you the ability to fight viruses

This is an interesting review as it evaluates the efficacy of naturally-derived compounds (flavols) in targeting the virus based on in silico modelling of molecules like quercetin and oleanolic acid. https://www.cell.com/heliyon/fulltext/S2405-8440(21)01919-8

These molecules directly target the binding of the virus to ACE2 or stop viral replication through inhibiting RNA polymerase.

I think it's a good reminder that there are more treatment options available for supporting the immune system and reducing the cytokine storm during the infection.

If you want to improve your Hormonal health, you must also support your git and liver.
