However, that phrase does not apply to this! ❌😅

Drying up some meat for some spicy biltong 🥓🌶️
Seasoned the biltong with the dehydrated pulp from the Lemon Supreme sauce, the 7 Pot Primo mash sauce, as well as Red Ghost pepper powder 🥵

Looking forward to giving these a go later 😁

2 months of impatiently waiting for these batches to ferment has produced some amazing sauces!

Smoked Cherry is a red Thai, cherry tomato, mango and smoked salt ferment 🥭

Lemon Supreme is a Aji Lemon and lime ferment, appealing to those you love a bit of the sour citrus flavours 🍋

These two will definitely be in rotation again when the next chilli season is upon us 🌶️

The Red Bush Rager ramps things up, banging on your door, complaining about not cracking an invite to your braai 💥
The Red Bush Reaper smashes your door to pieces, takes over your braai, and leaves you wondering what happened! 🏚️

Initially I wasn’t a big fan of mash fermentation, but this has convinced me otherwise! 😍

Took the last remaining pods that soldiered through the beginnings of winter, and transformed them into this delicious sauce 🤤 Just the perfect amount of heat, slight smokey flavour, and all the lovely fermentation tastes.
