I needed extra basil pesto for my creamy salami and mushroom pasta today and decided to make it myself. I blitzed fresh basil, roasted nuts (I used almonds and cashews), garlic cloves, parmesan cheese and olive oil - and then I added a dash of lemon juice. It was a winner!
