Happy Spring 🌸 I had this waffle Tuesday special from yesterday , with a scoop of cookies and cream, and a scoop of Nutella ice-cream. The waffle was crisp, tender, moist and fluffy! I highly recommend it!

Happy New Year guys ✨

Breakfast this morning I had spinach, mushrooms, 2 boiled eggs with a cup of green tea.

Please note that I am not a diet or a nutritionist. I am just sharing a bit of what I am feeding MY body.

Loadshedding hit me so I bought this. I advise meal preps. 😊

I'm back and I made a lentil and butternut curry.✨

Recipe: Lentil and Butternut curry:

1 Onion, chopped
1 Tsp. Garlic, Crushed
1 Tsp. Wet Masala
1 Tsp. Turmeric
1 Tsp. Cumin
½ Butternut, Peeled and Cubed
400g Brown Lentils, (I used the canned lentils in tomato puree and brine)
1 Tbsp. Robertson’s Spicy Lentil Dhal Cook – In-Sauce
1/3 Coconut cream (Optional)

Cooking Instructions:
On a medium heat, cook the butternut with olive oil. Or you may roast it if you prefer.
Sauté the onion in oil, add garlic, masala, turmeric and cumin. Cook until soft.
Pour in the canned lentils. Add water if necessary, and contents of cook-i-sauce. Let this simmer until the lentils are soft. Add butternut and coconut milk. Serve with garlic naan bread or in my case sweet potato and spinach. Enjoy.
