For all of our Portuguese friends here is another classic dish featuring the one and only Bacalhau. 🐟 The audio is in Portuguese but we have included ingredients and directions in English! Recipe (serves 3): 🔸1 piece of desalted codfish 🔸2 onions 🔸3 garlic cloves 🔸2 teaspoons of olive oil + 1/2 for greasing the baking sheet 🔸1 teaspoon chopped parsley soup 🔸Salt 🔸1 large or 2 small courgettes 🔸Grated bread crumbs (replace with almond or cassava flour for a low-carb option) 🔸1 handful of spinach 🔸1 pack of 200g light cream (I used it with 70% less fat) 🔸50g grated cheese Bake the cod. Keep aside 1/2 cup of the cooking water. Break into splinters, getting rid of skin and pimples. Heat a large frying pan with the onions cut into half moons and the olive oil. When hot, add chopped garlic. Cook over low heat until the onion softens. Add a little cod cooking water if it is getting too dry. Also, add the chopped parsley. Mix in the cod, mix and cook for another 2 min. Grease a baking dish with olive oil. Cut the courgettes into thin slices. Pass them through the grated bread and cover the bottom of the pan with them. Spread the cod on top, then the broken spinach. Spread 80g of the cream. Make a second layer of courgette covered in breadcrumbs. Spread the remaining cream and sprinkle with grated cheese. Bake in a preheated oven at 180ºC for 30 to 40 minutes. Serve and enjoy - desfrute de sua refeição. 🎥 @panelinha_de_sabores #bacalhau #portuguese #portuguesefood
