Why Freeze Drying Herbs and Medicinal Plants is so awesome!

It is always a sad day for me when I have to throw away jars of herbs and medicinal plants because they have gone past their expiry date of 1 year. I came across an article on freeze drying your food and I realized this is the answer to maintaining the quality of my plants and increasing their shelf life.
Well, Freeze Dryers are very expensive and if you are in South Africa, it is a long wait because it comes from the United States. This did not stop me from dreaming about having my own Freeze Dryer one day.

Getting Busy in the Garden!
Winter was cold with much rain and we can feel summer is on the way. Time has come to prepare the soil and plant. More medicinal plants arrived and it is the perfect day to get them in pots and keep them in the Greenhouse until they are strong enough to be planted out in the medicinal garden. When Peter saw the truck arriving with plants, he also saw the need to extend the medicinal garden 😆.
Today I decided to harvest the Lavenders. They were looking so beautiful, I couldn't help to feel some sadness when I had to cut the flowers. While cutting I was filling my lungs and enjoying the amazing smell of fresh lavender. They will be dried out in the drying room and once they are dry and ready, they will be infused in a carrier oil for 6 weeks and we will have some high quality lavender oil to add to our products.
