This week I thought we would take the time to introduce our new flavour lamingtons.

So without further adu, please meet our new Sassy addition, the Elachi lamington 🎉🎉🎉 super proud of this one and definitely one of my favourites, has anyone tried it yet? Let us know how you feel about our expanding lamington range😄 also side note, keep a look out because we plan on bringing ALOT more flavours out 🎉🎉🎉

So, today in celebration of mother's day, I thought I would share this amazing woman story, her love for her mother and strength to keep going in her memory has truly inspired me as I too have felt that loss, she has been a sassy bakes fan for a long time and now I'm not shy to say but sassy bakes has become a fan of her, not only has her resilience inspired me and my team but her beautiful soul and positive attitude is something we could all learn from, so with her permission I thought I'd share with you some of the things that has truly inspired me.

1. You wouldn't say this by just looking at her but Kim travels with a O2 tank everywhere she goes, this is because in 2021 Kim almost lost her life due to COVID and now suffers the daily struggles from its aftermath. The top of both lungs were eaten away by covid and permanently damaged. As a result she will suffer from pulmonary fibrosis for the rest of her life.
2. She lost both her parents (aged 56&55), 16 days apart from each other while she herself was battling COVID in hospital and still manages to be a shining light to their memory and sharing her beautiful story with everyone.
3. Despite all of these tragedies in such a short space of time, she hasn't lost her positive attitude and zest for life and this year alone has won an overseas trip and will be travelling further with friends abroad. She is truly a shining example that no matter what life throws at you, life also gives you a new opportunity every day to get up and try again, and even though nothing will ever fix what happened or fill the void of her loss, she is showing that with a little bit of perseverance and faith in yourself you can learn to love life again.

Thank you Kim, you are truly a beautiful soul.
