Just brewed a delicious cream ale! I had to get the mash strike temperature up to 72°C for a perfect 1-hour mash. This is the ideal temperature to extract maximum sugar from the grain. Cheers to brewing science! 🍻

What an amazing experience and .restaurant their dunkel which is a dark larger and not a stout as I was Informed was so smooth and full of malt. There was some coffee and caramel notes. This was also the first time I got to stamp my passport. I need to try and get some of the stamps filled in the passport and enjoy our South African beers!!

Just picked up some 440ml craft beer bottles from they make the best quality bottles in my opinion. I have been using them for the last couple of brews that I have done and I have never had any issues. One thing that we as need to always do is make sure the bottles and all our equipment is also clean and sanitized

So the first pour of my Cali common. What an amazing depth of color and Flavour. The caramel notes and the roasted toasted nuttiness comes through perfectly. So glad I got to brew this. Definitely going to be making more is this in the future. I did initially carbonate this using brew blend but after the first taste it was a little flat. I then decided to carbonate with the CO2 for a day and it made the moth feel amazing!!

All 4 taps are full on the keezer. We have an Irish red ale, a hoppy apple cider a Caramel tasting cali common and a strong 9% brown ale that’s like a fine wine or whiskey.

The color of this is a caramel brown in the beer line. I had a slight leak at the tap end for the keezer. I’m waiting to pour the first glass to have a taste and to see how the carbonation level is. I used brewing sugar at a ratio of about 100 grams for the 20l batch. This should give me a carbonation of about 2.4.

It’s nearly time to test out the beer that has been carbonating for the fourth tap on my keezer. I brewed a calli common. It’s a lighter, a bit sweeter caramel flavor and taste ale. I decided to use brewing sugar to carbonate this time to try out instead of using CO2.
