Bestanddele:
280 g (500 ml) koekmeel
10 ml bakpoeier
40 g (50 ml) strooisuiker
125 g (110 ml) margarien
3 groot eiers, wit en geel geskei
240 g (300 ml) suiker
150 g (500 ml) droë klapper
200 g fyn appelkooskonfyt

Metode:
Tertdoppe:
Sif die meel, bakpoeier en 1 ml sout saam. Voeg die strooisuiker by en vryf die margarien in. Klop die eiergele met 50 ml water en voeg dit by die droë bestanddele. Meng tot ‘n sagte deeg vorm. Rol die deeg dun uit en druk met ‘n skonsnyer sirkels uit. Voer die bodem van gesmeerde kolwyntjiepanne met die deegsirkels uit.

Bolaag:
Klop die eierwitte tot sagtepunt stadium en voeg dan geleidelik 300 ml suiker by terwyl jy steeds klop. Voeg die klapper by en meng goed.
Skep ‘n halwe teelepel appelkooskonfyt in die middel van elke tertdop. Skep van die klappermengsel bo-op en bak die koekies in ‘n voorverhitte oond vir 15 tot 20 minute, of tot krakerig en goudbruin.
Laat die koekies vir 10 minute in die panne afkoel. Haal uit en laat heeltemal afkoel op ‘n afkoelrak. C(_)
