Saturdays at Highland Foods are usually spent in the veg patch, labelling & packaging our products and generally getting things ready for our deliveries but this Saturday was even more exciting... we spent the day in the kitchen practising & testing out different recipes because we are going to have a food truck at the in 2 weeks time & we are Oh So EXCITED about it!!
This is our free range chicken Liver Pate - made in a cast iron pot on our Aga - and it is yummo!
Unashamedly, the recipe was stolen from our friends mom in law - thanks π nom, nom, nom.
Do any other get a kick out of seeing their products packaged, labelled & ready to hit the shelves?!
This was a day well spent π€©
Trigger warning: if you have OCD, look away now before you notice something you cannot unsee!! I promise to get better at this with practice π€£

How bloody exciting!
This will be the first of many workshops, demos & cooking classes so if you have something in mind for a weekend away in the mountains with friends or family - get in touch & we will make it happen!
It's always been a dream of mine to increase people's connection to food -how it's grown & where it comes from and I think hosting workshops & courses like these is a great opportunity to do just this!
QUINCES - on the outside they look like gnarly old lemons, on the inside they're kinda like a pear or apple and when they're cooked they turn this incredible pinky- orange colour - who would have guessed it from looking at them.
I think yesterday was the first time I have ever even held a quince - I was convinced to plant a few trees in our orchard by my husbands dad - now that I've made Quince Jelly, I totally understand why he was so persistent - it's utterly delicious!!
On a recent trip to , we visited the and their display of veggies made me so happy I could have exploded right there on the spot!!
Something that sold out within the few hours we were at the market was Sundried Mango - so now that we are home, I have decided to try my hand at sun-drying some of our own .
But, the BEST part about this experiment?
I have arranged with the local Fruit Tree Nursery to use the discarded peach pips as stock for their next growing season. And what's even more exciting for me, is that this is the exact same nursery where we got our initial fruit trees 5years ago, so it'll be like going to a big family reunion for these little pips!
Getting through a Monday is definitely worth celebrating - so I made this Courgette & Lemon cake and it made me so HAPPY π€
