Many of of you may not know that I'm doing a certification in functional medicine through The Institute for Functional Medicine. As a part of the learning process, I'm doing a month-long elimination diet so I can be better equipped to prescribe them to patients when it's appropriate. Here's a little look at some meal prep I did yesterday to get ready for my first week. Just like in Chinese medicine, functional medicine centers around a happy gut. Food is medicine! .......................................

for week one of my diet included roasted veggies, gluten free apple butter bread, homemade hummus, and split pea and lentil veggie soup. For dinner tonight we’re having dill seasoned salmon with rice and those roasted veggies. So far things are going all right, but I did miss my morning coffee!
