Sandwich Sunday flashback ⚡️

Who remembers our sandwich Sundays? This monster of a sandwich was done with the amazing pastrami from .

Good quality ingredients don't need too much company, so a simple slaw and off we went!

The ‘bread-and-butter’ of baguette baking is time. In order to get an open crumb structure, with the big holes (perfect when you're spreading your butter), you need a slow proofing process.

Our dough is proofed for a minimum of 14 hours, often much longer than that.

Viking Bageri started, by chance, when I couldn’t find a really decent baguette in Dubai - the kind you get in France or elsewhere in the world. It was lockdown 2020, and I needed an outlet from the stresses of my day job working in a hospital, and so I started to baking baguettes thinking to myself "how hard can it be?". After hundreds of iterations and several months of baking at home (yeah, it turns out it can be pretty hard), the ambition to bake Dubai’s best baguette came about. To this day we still aspire to that ambition.
