We’re in the mid of the week & you need to give this extra boost ⚡️for the family , that’s why we chose our recipe for today , Molokhia with chicken & rice / ملوخية على دجاج

As it’s a vitamin-rich superfood that helps create new cells, skin,muscles and it is a great food that boosts cellular growth, as well, aids in sleep & digestion for all the family 🥰
Along with the chicken that promotes brain growth among children & has zinc, choline, vitamin B12, iron ( organic option available)

For this recipe you need :

6 cups of chicken stock
1tsp salt
1/4 tsp white pepper
1.5-2kg molokhia
garlic & coriander to taste
1/2 cup of squeezed lemon
1kg chicken ( breast or whole , organic option available)

Heat the pot & begin by frying the coriander & garlic & then slowly add the molokhia , until soft add the chicken stock gradually with the spices bring to a simmer and keep on low fire for 20 minutes, after add the lemon keep for 5 min.

To be served with rice on the side & can be enjoyed with one of our yummy appetisers aside .

Just drizzle some oil on top to taste , place in the oven for around 25 min ⏲️. Then place it in the upper shelf of the oven for top roasting for 8 min .

Back to school means we need to be mindful for our kids 👨‍👩‍👧‍👦 immunity , so for today’s recipe we chose for you spinach with minced beef , as spinach is an immunity booster that helps protect your kids from illness , and the minced beef helps your kids’ muscles & bones grow 🥰

Spinach with Minced beef

For this recipe you’ll need :

- [ ] 1 Tbsp oil
- [ ] 1 onion minced
- [ ] 350-500 gr minced beef ( low fat option also available at our shop )
- [ ] Chopped coriander & garlic to taste
- [ ] 1 tsp salt
- [ ] 1/4 tsp cinnamon
- [ ] 1/4 tsp sweet pepper
- [ ] 1/4 tsp black pepper
- [ ] 800gr - 1 kg spinach
- [ ] 1 cup of water
- [ ] 4 Tbsp lemon juice
- [ ] 3 Tbsp roasted pine seeds

Start by frying the onion 🧅 & add to it the minced beef , coriander , garlic and spices gradually , keep stirring until mixture is soft ☺️

Add spinach and water until it starts boiling , add remaining ingredients , mix and cover keep for 15 min until the mixture is a bit solid in texture .

Can be served with rice & some appetisers from our ready made pastry options such as Cheese rolls 🥰.
