Pressed sticky rice layered with a silky coconut egg custard flavoured with pandan – that’s
right, we’re talking about Kueh Salat 😍

Pandan (screwpine leaves) is what gives it its distinct
rich green colour as well as vanilla-like fragrance 🍃

It is difficult not to succumb to a dessert like this. It is one of our favourite afternoon tea
snacks, even though we don’t have a major sweet tooth.

💚 Kaya is a coconut jam made widely eaten as a spread over toasted bread, soft buns, and as a cake filling or topping. It has a smooth texture, is creamy and rich tasting, made primarily with coconut milk and eggs, subtly flavoured with pandan juices, and sweetened with sugar.

We love it for its sweet, rich and creamy coconut flavour.

Grinding your own spices is a traditional art. Our mothers and grandmothers would meticulously grind chilli, garlic, shallots and more using a mortar and pestle. This releases their fresh and intense flavours which are then skilfully used to create pastes (“rempah”) for a variety of dishes from rendang to curries.

You may know of the dish Nasi Lemak. But do you know what it means?

“Nasi” means rice in the Malay language, and “lemak” means fat (which describes the creaminess from the coconut milk) 🥥

Traditionally served wrapped in a banana leaf, Nasi Lemak consists of coconut rice infused with the vanilla-like aroma of pandan leaves, fried Ikan Bilis (anchovies) and groundnuts, crispy fried chicken, an egg omelette or a hard boiled egg, slices of cucumber and a dollop of sambal. Sambal, a spicy sweet chilli sauce, is the soul of the dish; it brings together all the various components to complete this iconic dish.

Ikan Bilis, as they are known in Singapore, Malaysia and other parts of Asia, are tiny salted dried white anchovy fish. The name “Ikan Bilis” is of Malay origin: “Ikan” translates to fish and “Bilis” translates to small.

It’s a staple ingredient in Singaporean life. We eat them with peanuts as a snack, add them to soups for extra umami flavour or eat them with sambal on the side of Nasi Lemak 🐟

You can find different varieties of anchovies here but our Ikan Bilis are flown in from the motherland – Singapore 🇸🇬
