We all know Thanksgiving is all about the food, so here's some ideas to spice up your dinner table this year! ✨👇
🔸Vegan Stuffing
Preparation:
- Toast the bread in the oven and cut into small pieces
- Heat 2 tbsp of vegetable oil, cut the veggies into cubes and sautée for 7-8 minutes. Add the herbs and 1/4 cup vegetable broth and cook for 4 minutes. Add the cubed bread to a large mixing bowl, then add the sautéed veggies. Start by adding 1 cup of vegetable broth, mixing, and then slowly adding more broth as needed. Cover the stuffing with foil and bake in the preheated oven for 30 minutes, then remove the foil and bake for another 10-15 minutes until golden brown on top.
🔸Vegan Gravy
Preparation:
Add all ingredients to a medium sized pot and bring to a boil.
Whisk over medium-high heat for a couple of minutes, until the gravy thickens.
Serve with mashed potatoes! This gravy keeps well for up to a week in the fridge. Just re-warm, add a little water if too thick, stir and serve.
🔸Roasted Veggies
Preparation:
Peel the veggies of your choice and chop off the tops: Carrots, beetroot, potatoes and onions would work best!
For the sauce, whisk together 2tbsp of maple syrup, 2tbsp olive oil, 1 heaping tbsp of grainy mustard, 1tbsp low sodium soy sauce or tamari, 1/ tsp salt and 1/4 tsp fresh black pepper.
Add the veggies to a large baking dish or tray, pour sauce on top and roast for 35-45 minutes.
Garnish with pomegranate, chopped parsley and crushed pistachios to serve!
