Want to impress a few guests? This Florentine-style steak is prized for its tenderness. It's cut thick, grilled to perfection, and served rare with a simple touch of extra virgin olive oil, rosemary, and salt.
If you struggle to eat meat cooked rare, remember your steak will continue cooking as it rests before you slice it, so here are the temperatures you’re looking for:
50°C for rare (cool red center)
55°C for medium rare (warm red center)
60°C for medium (warm pink center)

Make mouthwatering Keftedes! They’re sure to be a hit with the whole family!
All you need is
• 1 red onion, grated
• 500g beef mince
• 200g pork mince
• 3 garlic cloves, minced
• 1 cup / 60g panko breadcrumbs (or use normal)
• 1 egg
• 1/4 cup fresh parsley, finely chopped
• 1/2 tsp dried oregano
• 1 tbsp extra virgin olive oil
• 3/4 tsp salt
• Black pepper
To make:
Simply roll a tablespoon size in your palm, coat with flour and shallow fry in oil.
Serve along side warm pita bread, cream tzatziki, La Vera Haloumi and a crisp salad for a Mediterranean feast!
