As you can imagine, life has been a big blur of sleep deprivation, feeding, cuddles and crying (by all of us 😬), which means my Thermomix has been getting an absolute thrashing - thank you handsfree cooking! I've been taking pictures, but not posting them 😬 because

We had Creamy coconut chicken curry last night - minus the cauliflower because it turns out I didn't have one 🤣

25 minutes and its on the table!

If you have an onion hater in your house like I do, my top tip is to press the home button after frying the onions and then chop them for 5 or so seconds on speed 5. Then continue with the recipe as normal. They'll never even know 🤭

Served with lettuce coriander and sour cream... delicious!

So I've been a bit quiet lately.. or for the last 6 months really 😬

But, just in case you don't know... I've been busy growing, and preparing for the arrival of two little humans!

If you've ever been pregnant before I'm certain you'll forgive me. Some days it's just about surviving, right?
And for those who've had the pure pleasure growing multiples, you are my absolute heros!

My thermomix has been getting a workout on the days when I can, and on the days that I can't, I've had a wonderful support network to cook us meals and stock our freezer.

My freezer stash is starting to get low though - so tell me, what's your fave mid week, super quick go to meal? I'd love some inspo!

Last nights dinner, Skinnymixers Creamy Tuscan Prawn Linguine 🤩

Being coeliac and low carb, sometimes the pasta hankering gets me gooooooddd! Lucky Konjac fettucine noodles are readily available from the supermarket, and paired with this dish, wiped my cravings out in no time 👌

If you've got this book, follow the low carb instructions, give the noodles a good rinse with hot water and pop them in to sit with the sauce at then end for 5.

Sorry for being so quiet lately. There's been lots going on in the Smillie household(s) of late!
We are currently mid renovation on our first home, getting ready to sell in just a couple of weeks 🥳
My days have been filled with paint stained nails and endless Bunnings trips.. (which I never get tired of, just quietly).
If you're as obsessed with renovation before and afters as I am, I'll share the house progress with you a little later on 😉

It's got some hidden cheesy surprises inside each roll, and as you can see looks super Impressive! (And if I can cook it, anyone can!)

Sometimes the easiest meals are Simply the Best *breaks out into song* 😆🤪

Seriously though, I love how meatballs are super tender, ready in 25 minutes AND my increasingly fussy 5YO gobbles them up!
Makes them the perfect last minute meal.

I use the variation and add some cheese and parsley to the meatballs, and go rogue by adding extra veggies to the sauce (hidden veg anyone? 🙌).
