10th of April 酪梨入土
This is a milestone for us, we had the very first crop, 100 avocado trees, IN THE GROUND! hooray🎉
It was cloudy and humid in the air when we taking the tree from current garden to Breem Creek. “Not the weather we want for a long digging day but at least it’d be good for the tree”- what we thought on the drive. Then as we went, the sky cleared up and our spirits was getting high☀️
Especially thanks to Nathan, Alex and the best neighbour in the world- Nicola, Carlos and the Wherrett family. Can’t have it done so nicely and quickly without you💚

Having the tree in is only just one of the steps on this journey, there are still so many things to do in different season and different stage of the tree froth. Hopefully we have most of the thing done right and eating our own avocado in three years!
四月十號
是我跟Sam的里程碑- 種了我們農場的第一個經濟作物「酪梨」入土啦🎊
從去年五月開始架圍欄的一切一切準備,都在這一天發揮作用。後續還會有很多持續照顧和維持的工作讓我們繼續忙碌,還有更多東西要種。還有房子要蓋(我多希望房子也可以用種的,它就會自己慢慢長大😂)
這一百顆酪梨樹不但能提供我們食物、經濟收入、還有透過將空氣中的二氧化碳轉化為土裡的碳來抵掉一些些我們生活的碳足跡。因為即使做再多的減塑、環保建築和環保生活的所有方面,我的生活脫離不了網路、汽油和每年搭飛機回家。
好啦,三年。三年後我開吃播,直接從酪梨樹上邊摘邊吃給你看🥑🥑🥑
Awwwwww! That 20-30mm rain forecast had turned into 100mm+!!!
So, since Monday we knew about the coming rain, we’ve arranged emergency solutions to protect those newly dug orchard mounds. We got in 50 lucerne bales, few cubic meters of wood chips, bring in 4 wheelbarrow to put covering on the mounds and hopefully it can reduce the soil getting eroded away to the minimum. Sam, I and Chien-Pai ( my brother) was ready to get our hands and knees muddy from Tuesday early morning.
Unexpectedly, our super kind neighbours came in to offer their help! We felt very touched and had a few tears. We stopped at almost 8pm, Sam stayed and keep working till 12.30am...
We starts again early today ( Wednesday) in the storm and rain till mid day, we had the last row done. All of us were exhausted and had done our best.
It’s 9.30pm now. we are all clean and refreshed, laying the couch in front of fire listen to the storm and rain. Fingers cross, hope for the the best.
I’m too tired to do the mandarin part today....😶

Orchard preparation
Very lucky to have good sunny day all week last week! That made it easier for digging these mounts on the orchard. Today is the 8th day that Sam lives in the shipping container to dig 14 hours a day.
It would’ve all be finished on Tuesday, but with the forecast 20-30mm rain on Wednesday, we are paranoid that these new mounds might be washed away. So Sam have to stop and we’ll all put on our rain jacket and gum boots tomorrow to throw wood chips on those mounds to prevent them from washing away.
There is still one row unfinished, we’ll probably hire the excavator again in the next two weeks to finish it. Then hopefully we can put our avocado babies in the ground around mid April! So excited!🌳
果園整地之—把表土堆高高⛰
因為酪梨樹根不喜濕冷,容易爛根,在冬天是雨季的塔斯種植,就必須特別處理。
酪梨樹主根會長到大概70公分,所以我們就把疏鬆富含養分的表土集中堆成小土丘再來種。這個方法在塔斯非常普遍,各式種櫻桃、莓果、釀酒葡萄的果園都是會做小土丘來種植。
我們用一日一百四十塊的價錢租了台小怪手(超可愛的啦!像玩具一樣)為了盡量節省怪手的租金(其實也因為只能撥出九天來做這項工作),Sam從天亮就開始挖,挖到天黑才停工。為了能夠多睡一個小時,他這整週也直接住在農地的貨櫃屋裡,靠我接濟食物,還好這週都出太陽還滿溫暖的。
每一週都只能做很有限的事,每一週都能有一點進展就很好😃

Greengage (Prunus italica Borkh) 青李在塔斯是很普遍在各家後院有的果樹,一到夏天,就會結實累累滿樹。完全成熟的青李有濃郁的梅李果香,甜而不澀,直接吃就是甜點。非常適合拿來醃漬或做成甜點餡料或果醬。
Sam姊姊後院就有三顆果樹,在短短一個月的果期要吃完那三顆樹根本不可能,放著讓它掉滿地又好可惜。反正我每年都心心念念想要找台灣青梅來釀梅酒,不如就試試看青李吧!
成份只有後院的無農藥青李加上當地的生蜂蜜,一年後看我po品酒照啦!如果失敗了,那我就默默倒掉不另通知了😁

之前朋友貼給我看一張台灣高價雞蛋的文宣,四盒十顆裝烏骨雞蛋500塊。強調母雞的飼料富含亞麻仁油、杏包菇粉、蒜頭粉等,且母雞在自然放養環境中長大。很貴嗎?不,這樣的蛋在澳洲一盒是$12澳幣。
我看完的念頭是,這不就是我家雞蛋嗎?我家爽雞都是吃我家蒜頭、魚肉、菠菜、節瓜、各式切下來邊邊角角的海帶、南瓜、蘋果、櫻桃、龍蝦鮑魚長大的。 知道在台灣也慢慢有族群重視食材產生的環境和飲食這件事情讓我很開心!

食用叢林
With the rain, warmth and longer day, the garden is turning into an edible jungle!
We have been harvesting asparagus, kales, celtus, spring onion, carrots, spinach, bok choy, zucchini, potato, garlic, silver beats, lettuce, chives, garlic chives, coriander and more!
This Friday we are turning those fresh and spray free vegetables in to our delicious chicken salad and egg fried rice to serve in from 4-9pm. Come relax with the music and healthy goodies😋
在夏季的長日照及溫暖氣候的滋潤下,所有菜園裡的植物都瘋狂成長。現在進菜園就像是走進矮灌木叢林一樣,隨手一摘都是好吃的菜。
對我來說種可以吃的植物遠比種花有吸引力,因為菜開起花來也是美得不要不要又可以吃,比只能看不能吃的東西更實在。送我一束花椰菜花會讓我比收到一束玫瑰花還開心!哈哈哈

桶仔雞的新境界
We introduced Sam’s mum to this new fire cooking experience when we camp on our new farm with her in the New Year’s Day. She was stunned🤩
I also trialed roasting a whole cabbage. It turns out well! The sweetness of this cabbage from plus the caramelised flavour makes it so yum!
自從發現桶仔雞桶子拿來烤羊腿也很成功之後,在盛產羊肉的塔斯,我開始有機會就來烤隻羊腿練習火候的掌控。樹幹粗細、距離桶子距離以及火相對桶子和底下陶甕裡的蔬菜的高低都會影響烤的時間和肉的口感。
正好從附近社區菜園買了顆鮮採高麗菜,順便就練習一下直火烤菜。炭火烤有一種電烤出不來的甜甜焦香,讓人欲罷不能!

What's the $5.50 entry fee for?
This is a very common question asked of us and, communicating the rationale behind it to people who do not understand the complexities (and costs) associated with operating a highly regulated, Covid-Safe mass gathering is a difficult task.
And we get it, unless you are knee deep in it as we are, it is difficult to understand.
So perhaps yesterday's experience at Franko will go a long way in explaining the entry fee.
The entry fee allowed us to build a new website that facilitated an online ticketing system so that we could capture the contact details of EVERY person that plans to enter Franko.
At 12.00pm yesterday, the State Government closed our borders to 5 LGA's in QLD deeming them high risk given the UK strain of Covid-19 identified in the community.
The entry fee then paid for one of our team members to work through our ticketing database and contact the approximate 50 residents from those suburbs who had booked tickets for the night to Franko, to determine if they were able to attend.
Some already knew, some were unaware that they should be in isolation effective immediately. A minority thought that they would come anyway. We advised them otherwise.
The entry fee then paid for 10 gate staff to vet the origin of customers who came to purchase tickets at the gate. We turned away 3 groups who were unaware of the latest updates and informed them they should be in isolation and they needed to call the Public Health Hotline immediately.
The entry fee pays for the masks our team wear when we are interfacing with these patrons, the phones we use to capture visitor numbers and scan tickets, the radios we use to communicate across gates and it pays for the gallons of hand sanitiser that we, and our customers use adhering strictly to Covid-Safe hygiene principles.
In a nutshell, the entry fee keeps us all safe.

First day of the year, we started a new project on the farm- I’m learning to drive the tractor and spreading amendments on the soil for the future orchard and market garden🌿
Sam and I shovelled 4tons of gypsum, calcium, potassium, nitrogen, and other minerals in two days. Mixed and spread the natural supplementation for our soil.
It feels great to be working hard on the very start of the year. I’ve got a feeling that it’s gonna be a very productive and good year ahead. Wish 2021 will also be a good year for everyone 💗
新年第一天,我們開始在新農場的新工作計畫:我學開農耕機還有給土壤中藥調理體質😀
兩個月前我們做了土壤成份測試,拿到結果後,我們找了土壤顧問來幫忙分析—針對我們預計種植的作物,每平方公尺應該要補充多少來達到最適當的含量。
所以在新年的第一天和第二天,我跟Sam兩個人一桶一桶的鏟了總共四噸的的石灰、鈣、鎂、氮、磷、和少量的硼,混合、倒進撒肥桶裡,開著比我還要老的老爺農耕機一行一行的幫土壤食補。
兩天下來做足了重訓,農場準備事項又完成了一樣,累,卻也心滿意足。俗話說好的開始是成功的一半,從新年的第一天就開始勤奮工作,讓我對2021有個很棒的預感!
祝每個人在未來一年也都向著目標邁進、解鎖人生成就,都有豐富又精彩的一年!

This is how a nutritious egg should look like- very saturated orange yolk
We have very similar environment to the wild chicken habitat- low bush canopy for chicken to scratch, to hunt, to sand bathing, to hind from predators for the pastured raising. We give our chicken nature diet- whole grains, raw meat/seafood and fresh from the garden vegetables or all you can eat grass😆 Our girls give us this beautiful nutrition dense eggs in return.
We use these eggs to make our Egg Fried Rice . We aim to lift our street food quality as high as possible from the ingredient 🥚🍳
你買的雞蛋蛋黃是什麼顏色,淡到幾乎快跟牛奶一樣白的慘淡黃色還是鮮豔飽滿機乎要偏紅了的橘色?
在工業化之前,雞蛋和雞肉都是非常珍貴的營養補品,因為那得是自己家有養才能吃得到的。我爺爺就曾說過,他小時候曾經病到奄奄一息,是遇到一個喪子的有錢老奶奶把他當兒子,一天給他吃一顆雞蛋才救回他這條命。
工業化後,工廠式的養雞模式出現,把吃雞/蛋的成本大大降低,雞肉成為全世界食用量最大的低價肉品,雞蛋每天都爽吃。可同時,雞肉/蛋的品質也被降低到前所未有的程度—因為品質並不在工業化追求的大量、低價的標的裡。
人類大腦會自動喜歡色彩豐富而鮮豔的東西,因為鮮豔豐富的色彩確實是有意義的。以天然食物來說,鮮豔的綠色、紫黑色、橘紅色代表他們的葉綠素、花青素、胡蘿蔔素、omega-3等等的含量相對高。攝取這些食物能得到的養分濃度也更高。
以前住在凱恩斯時我不懂為什麼Sam很堅持只買一盒貴兩塊的小規模放養雞場的蛋,但他吃的開心,我們不吵架就好。是在搬來塔斯,自己養了雞,偶爾再吃到外面的蛋才發現—味道完全不同!
這一趟自己養自己種的食物旅程,讓愛做菜的我對美味的要求提升到了從食材的風味及營養開始,而我非常享受這趟還在持續的旅程。
