Patrick Piuze ‘Terroir de Courgis’ 2022
Patrick Piuze, a Montreal native, took the region by storm when he arrived over decade ago. Piuze works with purchased fruit, and his great relationships with the growers of Chablis have allowed him access to choice parcels in all of the great sites. As for technique, he is a maverick. While 90% of Chablis is machine-harvested, he harvests everything by hand, a paramount factor in the quality of his wines. While most cellars use a pneumatic press, he uses a vertical one because he likes the initial blast of oxygen for the wines in hopes of preventing pre-mox later, a way of thinking also espoused by Jean-Marc Roulot.
Patrick obsessively crafts no fewer than EIGHT different villages-level wines, each giving a distinctive expression of terroir. He touts them as the qualitative peers of his 1er Crus, and with good reason — they are extraordinary.
Courgis is from a single vineyard on the left bank with clay topsoil on top of Kimmeridgian limestone bedrock. It’s typically the most weighty (think ripe, round fruit) of the Terroir wines. Fermented and aged in tank.

2019 Domaine de la Vougeraie Terres De Famille Bourgogne Blanc, Burgundy, France
From vineyards in the Hautes Côtes de Nuits and young vines from Clos Blanc de Vougeot, this is always very cool and mineral, but this year has the added weight of young vines from Vougeraie’s replanted plot in Bienvenues-Bâtard-Montrachet. Very expressive with notes of tropical fruit.
2019 Jonathan Didier Pabiot Pouilly-Fumé Aubaine, Loire Valley, France
Biodynamic. Pabiot’s first single-terroir cuvée Pouilly-Fumé comes from mature vines in Tracy-sur-Loire on caillottes, a weathered limestone soil of Portlandian origin with many stones on the surface. Specifically, Aubaine is hand-harvested from one hectare of Les Champs de Cris, sited high above the river on a plateau, a vineyard Pabiot describes as a joy to work. The winemaking for both the Aubaine and the Prédilection is identical—the hand-harvested grapes were pressed, naturally fermented and raised in concrete for 18 months—so the difference comes down purely to the two terroirs.
Aubaine translates as ‘something to appreciate’, and although this cuvée is the marginally more approachable of the two single-vineyard wines we offer today, the 2019 is the most intense and voluminous vintage Pabiot has drawn from this terroir. Full and deep flavours of nashi pears and white stone fruits work alongside a pulpy and pithy mouthfeel, a little matchstick, driven acidity and a slight textural grip. It’s a wine of momentum, building to the back the palate with power and flavour.

The 2018 Kiedrich Turmberg Trocken offers a beautifully coolish, clear, precise and flinty as well as herbal, intense and refined bouquet of ripe Riesling aromas and crushed stones. Lush and piquant, this is a highly elegant, salty, piquant and mineral dry Riesling with a long and tensioned, very fine and promising finish. This is a classic in the making and should age terrifically. Very, very long and full of salt and music.
NV Bernard Lonclas Blanc de Blancs Brut, Bassuet, Champagne, France
Bernard and Aurelie Lonclas have fizz in their blood, and this Blanc de Blancs, made from 100% Chardonnay, is their speciality, with gentle bubbles bursting with fresh lemon, green apple and white peach, flecked with notes of baguette, honeysuckle and toasted nuts.

An attractively floral nose speaks of pear liqueur and enough Chablis character to be persuasive. The delicious, succulent and rounded middleweight flavors possess
unusually good volume for a wine at this level allied with fine punch that carries over to the refreshingly dry finish. This offers solid quality for its level in a package that should afford early drinkability.

2020 Jonathan Didier Pabiot Pouilly-Fumé Prélude
Biodynamic. Cropped from the domaine’s younger vines, Prélude is the first Pouilly in the range. Even at this level, shrewd yields and precise farming elevate this above the norm. Established only in 2018, this is the only wine in the range one might pick as a varietal Sauvignon, yet there is ample intensity and texture to balance.
From a selection of lieux-dits, the vineyards cover the gamut of Pouilly’s soil types (including, limestone, silica and flint). The grapes were primarily whole-bunch pressed with some crushing for structure, and aging took place in stainless steel tanks on the lees, for between six and eight months.
Styled for early drinking—which is not always the case at this domaine—expect pure aromas of fresh orchard fruits, white florals and a whisper of wet pebble minerality. It’s a high-impact Pouilly-Fumé, intensely flavoured with stone fruits, minerality and an appealing back-note of grapefruit bitterness. The lengthy finish is driven by mouth-watering chalky acidity.

2020 Domaine Fabien Coche Bourgogne Aligote
From old vines planted 1950’s to 1970’s in the commune of Meursault in the lieu-dit of Les Penteaux. Aged 100% in tank this year and bottled in February 2022. This shows excellent intensity of flavour and character showing ripe orchard fruits with the fine lifted floral aspect of Aligote. Notes of pear and even apricot indicate the depth and ripeness apparent here. Still fresh and lovely yet with terrific texture and surprising depth. An excellent introduction to any tasting and very promising for what is to follow. A great discovery.
