PLATE NO.9 ~ BRASSICA TART, SESAME

A new dish on the menu.
Simple tart of olive oil pastry encasing blanched cavolo nero from garlic chives and caramelised onion. Served with a sesame sauce and a green paste made of capers, tarragon, parsley and mint.

PLATE NO.7 ~ VENISON TARTARE, EZME, GNOCCO FRITTO

A new dish: Raw, wild culled venison from diced finely, kibbeh-style. Dressed with an ‘Ezme’ tomato salad with eschallots steeped in shiso vinegar, a confit tomato concasse, Aleppo pepper, tomato powder and red pepper paste. Served with a gnocco fritto for dipping.

CHAMPAGNE ~ The perennial drink, which happens to be in season right now. At Heather we like to focus on those iconic producers at the tip of the spear when it comes to making deep resonant wines that transcend their fizzy form. Growers like Selosse and Courtin have refined Champagne into an art form of great beauty and though expensive, it’s something any wine lover should treat themselves to… mind expanding bottles.

PLATE NO # 3 ~ SPANISH MACKEREL, JADE CUCUMBER, INK

Grilled Spanish mackerel, line caught by and accompanied by jade cucumbers from cooked lightly on the grill then dressed with a tarragon and roasted mackerel bone vinegar. Served with Ink sauce flavoured with anise, hyssop, mint and confit garlic oil.
